    Oh my gosh, I had done other chef's gumpaste, but what I needed one when humid in the home. I'm so glad I found your recipe. I made it yesterday even though I didn't have the gum tragacanth. I substituted it with gum text. Then I realized, it was the same as CMC...lol
    But I made a rose and it glued perfectly. I need to try stretching it on the mixer. I have the attachment but haven't attempted it yet.

      Oh yay!! I’m so glad the recipe worked out for you :) you can always adjust the amount of CMC in the recipe if you find it too soft or too firm. Enjoy your flower making 🌺!

    I've tried store bought gumpaste and tried another recipe and was not happy with either of them. Your recipe looks ideal. I'm trying my hand at frangapani and hibiscus flowers, perhaps you could post a tutorial on how to make them. 🎉

    Thanks so much to Alexandra for getting the recipe to me. My third try was the charm. Not sure why since I didn’t change anything but I’m quite sure it was on my end. The paste feels great now. Going to make flowers and or foliage tomorrow. It feels like it will be great to work with

    Your gum paste looks amazing I would like to try making the gum paste but I’m a bit confused I have Tylos powder but don’t have gum Tragacanth what is the difference between the two I’m a beginner and still learning I was told that CMC powder,gum tragacanth and tylos powder are all the same can you clear this up for me so I have a better understanding of what does what. How can I make your gum paste with just tylos is there an alternative. Thank you in advance.

    First of all I would like to thank you for showing and sharing how to make this wonderful gumpaste. However, I do have some questions,
    The purpose of gum Tragacanth and Tylose are basically to thick the dough, why we use both?
    What is the purpose of agar" in this gumpaste?
    Can I substitute vegetable shortening with Vaseline or glycerin? since I am not going to eat it or even to decorate on the cake?
    For those who are on budget and don't have mixer with pedal, can one using hand to knead the dough?
    I really appreciate your time and kindness for answering my questions.

      Hi Carla, I like using both tylose and gum trag because I find the texture better for working. However there is a substitute of using just tylose if that's all you can find. Gelatin is to additionally improve texture. No I wouldn't suggest substituting the shortening. It should be fine to hand-mix the only part that will be difficult is the initial whipping of the dry/wet ingredients (you can use a hand mixer for this if you have one).

    First of all thank you for this recipe! Its amazing! And second, I would love to see you create a tutorial on dahlias! 😍 Im planning to make my wedding cake (Everyone thinks Im crazy for even thinking this haha) but I did your 5 day sugar flower challenge and I think I can do it! I have until august to practice and only the top tier will be actual cake… so it can be make in advance. But a lot of my flowers will be dahlias so I would love to have them on my cake as well 🥰

      Thank you Adedoyin! Sure use just 2.75tsp CMC/tylose total if not using gum trag. And you can hand-roll your petals with a rolling pin, it will just take a bit longer than using a pasta machine

      @@yemipopcrafts7234 The 0.75 replaces all gum trag. You may need to adjust the amount when you make it again, all CMCs have diff strengths :)

      This is normal if it's just coming out of the fridge! You will have to knead it so it can come to room temperature and it will soften considerably, let me know if that fixes the problem :)

      @@kindasayegh9360 Oh no, okay, so next time try adding less CMC and gum tragacanth. Use 3/4 the amount of both, then after it's rested in the fridge overnight you can check the consistency. If it's too stick you can knead in a bit more of both.

      @@kindasayegh9360 Ooh okay. CMC can vary in strength so you may want to start with even a bit less than 3/4 if yours is very strong! You can always add more :)

      Hello, thank you! I have never tried with xanthan gum but if you do please let me know how it goes! You can always just use all CMC (2.5-2.75tsp total for the recipe, you may need to adjust depending on your brand).

    Hello Alexandria! Thank you so much for the great recipe l! I made it once and it was almost perfect, but it was drying a bit to fast and it was not stretchy enough. As per the comments I’ve read I put less CMC for my second batch, but now it just won’t come together and it’s way too sticky :/ I am not sure if it’s fixable, do you have any advice for me? I’ve tried with more shortening, but I’m afraid to put too much. Can I put more cmc after the paste is ready and had already matured for 2 nights in the fridge? Or is it too late?

      Hi! I think you could try the original recipe again and just add more water. You could reduce the CMC very slightly (1/4tsp or less) if you want, then if it needs more you can knead a bit more in. So to answer your question- yes, you can add more CMC. Allow it to rest in the fridge after it’s been kneaded through then see how it is in an hour or so.

    Hi Alexandria! Thank you so much for your classes... I am improving my sugar flowers... I tried your gumpaste and I love it because it takes texture so much better and rolls quite thinner! The only problem I have is that it dries super fast... Should I make any changes to the recipe?

      Hi Annie! If you find it's dry from the start just knead through some water until it's a better consistency. If you find it's crumbly/not holding together well you need to add a bit more CMC and water as well.

    Hello thank you for the share you are an artist ! Please could the shortening be oil ? If i use fresh egg whites i don t have to heat the gelatin just dissolve it right ?

      I've never tried oil, I think a solid fat would be best. You do still need to dissolve the gelatin. Use 30g water to dissolve the gelatin (heat it), then you can stir in the 30g egg whites

      You can keep it in the fridge for months as long as it’s kept in plastic wrap and zip top bag

    I’ve just followed your gum paste recipe this morning and it’s maturing in the fridge. As I’m vegetarian I used agar gum (vegan gelatine) which you suggest as a swap. I had to heat over a ‘bain-marie’ as I don’t have a microwave and wonder if this evaporated more water than using the microwave as the paste wasn’t sticky at all as I was kneading it. I added a tiny bit of water and kneaded it to try and copy what yours looks like in the video. Going to try a spray rose 🌹 when it’s matured. Wish me luck! Love your channel by the way ❤

      @@FinespunCakes the gum paste turned out really well and I’ve made a load of spray roses and fillers and a big David Austin rose. It was drying a little too quick for me so I will try reducing the amount of tylose next time I make it 🙂 thanks for the recipe

      you don’t absolutely need it but it’s what I recommend for the best texture. you can use 2.75tsp CMC in place of all CMC and gum trag if you’d prefer

      It could be the CMC used, you might need to reduce it depending on the brand and it will be more stretchy. Try 1/2 the amount and you can knead in more later if needed

    I made gumpaste on your recipe but i used arabic gum instead of trag
    The paste become very fragile and broken easily
    Can i use xanthin gum as I can’t find trag gum in my country

    *Tragacanth Gum
    *meringue powder
    Actually we only use gelatin and icing suger and tylose powder ...

    Hi Alexandria I really love your video’s, I am an at home baker just starting out. I made your gum paste for the first time today. When I removed it from the mixer it did not look like yours. Seems to be stiffer, I did keep kneaded it trying to get it smoother. Does this seem ok. My first flowers will be carnations for the top of a cake. Again I appreciate you and all your teaching, it helps me so much!!! 🙂

      Thank you Doris! What kind of CMC did you use? I find some people have problems with certain brands as they're too stiff. For your next batch try a different brand or reduce the amount by 1/2, then you can always knead in more if needed.

      It was Wilton gum-Tex tylose powder, ok I will try to cut by half next time. I did start using it for butterflies. It is working, I think i need to cover them after I cut. My next is carnations, if they don’t work will try new batch.

    Hello! Thank you for the recipe and excellent tutorial! Question... after kneading - before maturation - my gumpaste looks like it has "holes" or something - it's smooth but has sort of air pocket kind of things, and isn't as stretchy as yours. What am I doing wrong?

    Hi, thanks for such a brilliant recipe. I noticed in the cake at the end that you have fuschias. I've never had a lot of success making these; do you have a tutorial or can you make a tutorial please?

    Hi, thank you. just followed your recipe/video. Seemed to work really well, but however much I kneaded it, it still appears slightly grainy! Will this disappear after maturation? Shame that the Gum Tragacanth makes it off-white, though - it was so super-white before I added that! Does it depend on brand, I wonder? (I'm in England). Thank you x

      Hi Diane, I've heard a few people have this problem. It could be one of two things. 1. Your gelatin wasn't dissolved fully (this will look like tiny translucent beads). 2. The icing sugar brand is slightly grainy, not as fine as the one I use.
      My gum trag is just off-white, I don't find it makes a huge difference! You could always replace some of the water with titanium white gel paste if it's a problem :)

    Thanks alot for the recipe. I use to follow your tutorials they're amazing. I have tried this recipe today it seems hard apparently even before maturing. Any hacks how to secure this batch please. Well apparently it seems, I have got hold of good quality tragacanth gum which is strong, so next time will try half amount. My two questions are 1. How to secure and use this batch which I have made today? 2. For next time if I had added half amount and want to add more gradually according to the requirements then how to add?

      It can be difficult to bring a batch back but what I can recommend is making a very weak batch and kneading it together with the very strong batch to even it out.
      Next time after you've added 1/2 the amount let it mature overnight then you can knead in 1/4tsp at a time, letting it mature for 15 min covered in plastic wrap between each addition.

      Hi, you can usually buy it online but if not you can use just tylose- 2.75tsp to replace all gum trag and tylose in the original recipe.
