- In today's video I am cooking up a spatchcock chicken on my Traeger Ironwood 885 pellet grill. Even more exciting I am FINALLY debuting my Ash Kickin' BBQ Honey Chipotle rub that I have spent the better part of this year working on! Spatchcock chicken is an easy and delicious recipe that doesn't take too long and is a great option for a weeknight meal, or for meal prepping, which is exactly what I did with this chicken today! It made lunches for an entire week and it had tremendous flavor from my pellet grill! Even better, this easy spatchcock chicken took 2 hours to cook and was minimally hands on! Easy and delicious spatchcock chicken recipe:

-1 whole chicken
-Ash Kickin' BBQ Honey Chipotle Rub (link below)
-Melted butter
| Instructions |
Prep:
1. Remove chicken from packaging and pat dry.
2. Use a kitchen shears or a knife and carefully remove the spine of the chicken by cutting on each side of it.
3. Lay the chicken breast side up and push down until the breast bone cracks and the chicken lays flat. Optionally you can use a knife to slice the bone.
4. Season the bottom side of the chicken first with Ash Kickin' BBQ Honey Chipotle Rub.
5. Flip the chicken over and place onto a cooling rack that has been sprayed with oil, and then season the top side of the chicken evenly.

1. Set the temperature to 300º F.
2. Put the chicken on the cooker and let cook for 1 hour.
3. After 1 hour, insert a probe into the thickest part of the breast and then rotate the chicken 180° for even cooking. I set my probe alarm for 162° F.
4. Once the chicken hits 162° F, drizzle some melted butter all over the chicken and continue cooking for a few minutes until it reaches a safe internal temperature of 165° or your desired doneness.
5. After the chicken reaches a safe internal temperature, remove from the cooker and let it rest on the cutting board for 10-15 minutes.
6. After the chicken has rested, slice, eat, and enjoy!

What kind of cooker are you smoking on? Also, have you verified the temps are accurate? Your skin could’ve been wet when it went on. There’s a ton of variables here.
