In the town where my dad was born in Italy, Pescara in Abruzzi, that soup is a Christmas soup... very similar in some ways but different in others... I have heard of it being called a wedding soup in other parts of Italy though. We make it every Christmas. It's my favourite soup.

Traditionally it is made with escarole But sometimes I make it with spinach works well too
I’m Italian I was raised on wedding soup my mother used to make it with chicken the best soup ever I remember when we were kids she would make a big pot of this in the middle of summer 100° out would be eaten tell me wedding soup I know it’s been running I’m from Boston to cook a way where I enjoy your show
I know you’re trying to be healthy but traditionally you we would brown the meatballs in the pan then add everything else to it that makes a intense flavor You know what I mean
Do you think it taste good now give it a couple days in the fridge there’s nothing better than leftover soup

Entertaining interview! And a great recipe is very similar to a dish that here in Chile is called Albondigas , it is just as it is, with the difference that it is not cooked in the oven, it is cooked directly with the soup! Thanks for sharing your recipe Mm! rico 😋❤
