    Oh my goodness! I’m Mexican and I think you are talking about tamales. They are also made with a corn flour called Maseca. They are wrapped with the corn husks and steamed. I’m curious to learn about foods from all over the world. Love it.

    I Ghana, they boil kenkey or steam it with the husk. Its only in the city they use plastic to cover.

    So you come again with Komi, just to make me jealous... I should think of nearest county to travel just to get some after this pandemic nonsense is over. Italy maybe, or Austria, feel free to advice this kenkey hungry obroni. Last one I had I believe was the one at Bola junction in front of the car wash in Labadi, so long time ago...

      You can do it wherever you are if you can't get access to corn dough but can have access to fine corn 🌽 flour. Mix the flour with some water to a corn dough consistency, cover and leave it to ferment for about 6days. Check after the first 3 days to scrap the top and press it again then cover it.
      If you achieve the corn 🌽 dough fermentation and decide to do kenkey like the process they showed here but you don't have a corn 🌽 hust, you can use kitchen foil to achieve similar outcome.
      Some use plastic bags which is not advisable to encourage but in the absence of a corn husk, foil is the alternative. Becouse we do bake and grill in foil bowls.
      You can get farina di mais bianco per polenta If you are in Italy 🇮🇹 to do this.

      @@dolcemariah4123 Thank you so much Agatha for your spot on guidelines, even though I doubt I can find white corn flour, let alone the corn husks, all essential for a "well behaved" kenkey, I will try using ingredients on hand and most likely succeed.. I already got my shito ready, even grew my own kpakpo shito for it. Fish and shrimp powder is yet another story... I live in Serbia, BTW. 🇷🇸

      @@dolcemariah4123 Sure, I can get fish here, not as fresh as in Ghana but quite ok. There's no fish or shrimp powder here though but I managed to make my own. One thing I can't get here is such a big variety of fried fish to with kenkey. Those tiny leggy shrimps, small tilapia, some longish dark small very oily and tasty fish, and of course, the best of all, "one man thousand". Hmm, I might be missing Ghana more than I think 🤔...
