This is the best method for Tri Tip in my opinion. I usually can fit most of them in my Jumbo Joe that I park on a 22 kettle. Tri Tip is my favorite beef cut now.
What I love to do is get a bigger Tri Tip and cook it up, once it is done eat up most of it but save some for tomorrows sandwich. I put the Tri Tip in the fridge, the next day I pull it and cut it super thin and then in half, put it in a pot of BBQ sauce , and serve up with nice rolls. There is zero waste with Tri Tip unlike lots of cuts of meat.Kid friendly and safe.
Do you feel confident using this process for steaks?
One of my new favorite ways to grill! Kinda finicky on thinner cuts but you can get way more smokey flavor than by searing first

Have you ever brined it first before doing this method? If so, then how long would you brine it for?
