Nutty, buttery and a bit boozy, Vaughn Vreeland's festive cookies come together in minutes, making them perfect for holiday baking. (They also happen to be gluten-free.) Reminiscent of the almond flavor and pillowy texture of an Italian pignoli cookie, this recipe calls for brushing them with rum-infused butter twice - once before baking and another round when hot from the oven - which imbues them with even more warmth and richness.

I‘m from Frankfurt, Germany and we have a similar Christmas cookie known as „Bethmänner“ (kind of translates to praying men) here. They are not entirely the same, but there’s a likeness for sure. They are smaller and more liked baked marzipan with 3 whole blanched almonds attached to the sides (apparently religious connotation) and often flavoured with a tiny bit of rose water. They are very traditional and well loved :) I am looking forward to trying your rum butter version - so cool that they‘re gluten free!
I think a lot of modern recipes are just old recipes tweaked a little. We have a similar cookie in Greece

I am planning to try them, too. In the past, I’ve made a basic Italian almond flour cookie that is online everywhere for no gluten friends. I had dried cherries to it and it’s a good option, too.

I started the video thinking that these cookies would look like they would be easy to turn low carb, and as soon that I saw he was making them with almond flour, I was sold. The only substitution needed is confectioners Swerve instead of the sugar.

So it’s like an amaretti. You could maybe make a lemon flavoured version by adding zest and limoncello to the dough instead of rum. Think I’ll try both versions . Using the flaked almonds on the outside instead of sugar/icing sugar like on an amaretti is a lot easier and as a bonus healthier. Great idea.

What is that tiny scooper you were using to scoop cookie dough into the flaked almonds?? What measurement is it?
Can I pulsate regular almond flour in my food processor to make it fine? What kind of rum? Can I use dark rum arrr? Can I freeze these?

Great looking recipe! If you're making them for other people though, you really should split your buttered rum into two dishes so you don't cross contaminate your cooked cookies with raw egg from brushing the uncooked cookies.

I’d use a good vanilla paste like Neilson Massey or you could even go rouge and try cardamom or anise just to give it an extra punch, recipes are meant to personalize and have fun with, don’t let people discourage you from experimenting.

depends on what brand you use and the ingredients in it. I would just use extra virgen coconut oil. coconut and rum go great together

Could I make this recipe with all purpose flour instead of almond flour? And if so, would I need to adjust the amount of eggs/eggwhites I use?
You definitely don't want to use the same amount. Often, you need half as much AP flour as almond flour but every recipe is a little different.
not a good sub. almond flour is just ground up almonds which have no gluten and are high in fat. AP flour has almost no fat and high level of gluten so would be a totally different recipe

I’m pretty sure Sohla’s is also gluten free this year, sooo tied for first at best
The speculoos in her recipe make it not GF. You’d have to sub-out the cookie butter for peanut butter and remove the cookies bits or use a GF version. But easier to adapt than many other recipes

Do not use blanched almond flour, you might as well use sawdust.
Best is to make your own or find a supplier that has it in stock the difference is night and day.
