Wow! This bring back so much good memories of my childhood. I grow up with my grandmother and every morning we had cocoa tea. Comforting drink with the grease from the beans floating. We had to dry the beans, roast and ground it to get that oily looking cocoa ball. Really delicious drink. Thank you.

St Lucians add some custard powder slurry to thicken it. They also use Condensed milk rather than sugar.

OMG you made my night (Vancouver BC).
My granny was one of the hawkers in the POS Market. The plantation was acres and she used to make those cocoa sticks and sell them in the market to hungry shoppers. Great memories. THAT was our rich Carib culture.

My Mummy used to make Chocolate and dumpling tea for us for dinner, she said that was a Bajan Special. It was milky and delicious. What she did was grate and boiled the chocolate stick, then put to boil with spices. Then strain it, put the liquid in another pot on the fire, let it rolling boil, add small pieces of dumpling to cook. Then add evaporated and condensed milk. Delicious!

Interesting. Masala chai but use cocoa instead.
The bay leaves are an interesting addition. We just get dried ones here I am not sure they would work as well. Raw cocoa too.

Never used salt, so this is a must try. Usually add some custard or flour for thickness. Also dry orange/lime peel. Cristal and Badawi...next recipe should be black rum cake. Try bringing Rene for one of her special recipes.

The only new thing is the use of the star anise and coconut milk is optional. Your spice blend is to your taste but cinnamon , nutmeg and Bay leaf is a must...and clove if you like 😊
