    *Easy & Delicious Salmon Patties*
    1 can of wild caught salmon (soft bones and skin included!)
    1 egg
    1/8 cup shredded unsweetened coconut OR pulverize 1/3 cup of oats slightly
    1/2 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. red pepper flakes
    Place all ingredients in a bowl and mix together with a fork. Form into patties with your hands and fry in oil of your choice. We've used olive oil and coconut oil, but our favorite is toasted sesame oil. Once browned, flip and fry on other side - approximately 5 minutes on each side.

    Luv, luv, luv your video's including ALL your children. The content is not unique to me growing up on a large farm here in Ontario, however I enjoy watching your home life and content on the farm....it truly gives me joy. I know it's been a few months since this post, but what a gift you and your family have taken over from the previous owner whom recently passed. Knowing the history of the land owned previously is a blessing for sure. Simply Thank you. From Ottawa, Ontario.

    I'm SO sorry for the loss of the previous owner of your farm. I teared up along with you... SO sad. But, It sounds like he and his wife are so relieved that your family farms the land, making such good use of it, and enjoying it so much. That gives them much happiness. Lovely...

    This may sound odd but I've known several people would have been on the elimination diet. Several of them either drank 1/4 cup of sauerkraut juice first thing in the morning or ate 1/4 cup of sauerkraut in the morning. Apparently it is really good for gut health and healing.

    I'm so sorry about the loss of your friend. Thank you for mentioning he was a believer. Sending prayers for his family and friends. I enjoyed the Day in the Life on your farm. Reminds me of my childhood. We always had a milk cow, sheep, chickens and sometimes a pig, along with a vegetable garden. My mom conserved and made many things from scratch. She use to make lye soap. It's just me now, so I don't farm. I can and freeze fruits and vegetables a little bit. It's so nice your children help around your place. Sweet children. ❤️ 🙏

    Hey Ozark Family, I’m so very sadden for the loss of your dear precious friend! May GOD comfort his family and y’all as well! Death is a thing that’s truly hard for us here in this world, our loved ones that pass on, and that we know they have lived a life serving the Lord, then we are comforted know that they are with Our Savior JESUS CHRIST! And knowing that always brings us comfort, even thou we are selfish at times and want them to remain with us here!

    I have some dietary restrictions and one of the things I do when making soup is to just make a base of all the things we can all have. I then just pull out mine and add the other items like barley to the rest. Once you get used to it, things will be easier and more natural. Praying it gets resolved and this is just a season in life not a lifetime thing

    You can use shredded potatoes as a binder in salmon patties as well if you make thinner crisper patties.

    We have 4 daughters 56,53,51,46. 10 grandchildren (6 boys 4 girls) 2 Great Grandchildren .. Kimber is 8 yrs old, Stella is 2 months old. When I look at your children it makes me smile. They have the best life! They grow so fast! Love them all and there personalities. I had a Our daughter’s name are Michelle Lyn,Dawn Renee, Tricia Ann, Caleigh Jo.     I live with my daughter, son-in-law, & grands. We have three with food allergies & sensitivities-all different ones. We are careful to do no cross contamination and, much to my chagrin, completely avoid the actual allergens. No tree nuts (walnuts, pecans, almonds, etc) and no peanuts. The sensitivities are spread over 3 of the 4 grandkids and include dairy, avocados, apples, pineapple, kiwi, bananas and most raw veggies. It makes it hard to make a thanksgiving or Christmas meal with all the goodies. We have become very adept at making sure if we do make, for instance, an apple pie, it is done separate and apart from everything else. It can be done but our kiddos are older and understand the gravity of food allergies. The 10 year old always gets peanut butter when her sisters are away from home. She immediately goes to wash hands & face and brush teeth before her older sister gets home. I hope it works out for your family.

    Janice, So sorry to hear about the passing of your friend. Your paths crossing must have been a God Thing. Both families blessed from this homestead land. 🙏🏻 This was a great DITL video.     I get that you have a family member with a health crisis but I think it would have been easier not to even mention it at all. I doubt anyone would have suspected it if you hadn’t called attention to it, but by the secrecy around it , most now have an inquiring mind 😂 🤔

    Hope the elimination diet is helping with any bothersome symptoms. As the new diet becomes more familiar it will be easier. Hope y'all have a good week! I know a girl that sucked her thumb until she was almost 12. Love & prayers!

      @saras4181... OH... you must be talking about ME! I did. Part of it was comfort and part stress from being scared. I have an overbite from it. My daughter sucked her thumb for a long time and also has an overbite.

    Is so hard. I'm slowly emptying out my barn and 3br 2b house. Stan was never sick a day in his life. I'm so sorry for the loss of your friend. I'm going to miss my farm for sure. But i just can't do it by myself. Time to downsize

    I have severe anaphylactic allergies, I’ve been tested dozens of times and just know that sometimes you get a positive on a day but it’s not a true allergy. Allergies also change over time…develop new ones or grow out of them. It’s tough for a big family to accommodate just one, my grand takes after me and he’s allergic to milk. I do all the baking (my passion) so I’ve switched to dairy free for all recipes that go to his house…just find it easier so they know everything is safe that comes from Nona! Many prayers and respect for keeping the family members privacy.

    I swear, Abigail is the smiliest (is that a word? Lol) kid I have ever seen. You just never see her without a smile on her face and a little giggle. It's so genuine and sweet. It's even contagious, I'm not known to smile very much that's just how I'm wired but, I gotta admit she can always bring a smile to my face and that ain't easy. ❤😅

    Turned out the mama was too loud for the daughter's video. ;-)
    Another thing that was funny was the boy stretched out on the couch, seemingly lost in a book, until the mom asked if they were ready to eat, and he turned that head quick!!!
    Hahaha, boys and food can't be separated by a book.
    If you're family member can eat corn, make them some cornbread.
    I'm not a specific measurer because I've been making it so long that I can do it in my sleep.
    But it is a quick bread that's very forgiving.
    I toss some self rising cornmeal in a bowl, add a scant teaspoon of sugar to accent the natural sweetness of the corn, a pinch of salt, egg and buttermilk, mix, add bacon grease or other fat from a hot cast iron skillet that has been heating in the oven, and fold it in, pour the batter in the hot cast iron skillet and bake.
    The cast iron skillet flavors the cornbread like no other baking pan can, and it needs to be hot enough so that the batter sizzles when it hits the skillet to aid in the crust, but also to help keep it from sticking.
    Also note that cast iron skillets will leech iron into your foods, this is a good thing, just ask all them folks out there that have to take iron supplements, and doctors/nurses can usually tell right quick if you use cast iron cookware just by your healthy iron levels.
    You can make it a thick or thin batter.
    Buttermilk makes it incredibly moist and flavorful, but also aids in the leavening process.
    You can make it thicker for a big cake of cornbread, or thinner for lace cornbread, which is fried in a cast iron skillet like pancakes.
    You can even fold in some cooked onions, bell peppers, cheese, hot peppers, corn niblets and even bacon into the batter, which can be a side for any meal, or just a snack.
    Some folks eat lace cornbread like pancakes, maple syrup and all, which is another option, not the syrup in this case, but some fruit preserves without added sugar would work.
    Grits are a type of porridge, and you can make them savory or sweet, meaning you can use the same things you usually add to hot oatmeal, or you can add cheese and onions, or any number of of other ingredients.
    You can make cornmeal mush like polenta too.
    Make seasoned cornbread croutons, if that's something you enjoy.
    There's a corn casserole that I make that would work and you can add to or take away any ingredients you prefer, but again, I don't measure.
    It's whole kernel corn, onions, bell peppers, jalapenos, garlic, cooked and drained ground beef, parsley flakes, smoked paprika, cream cheese, milk or cream, any cheese you like, any spice blends you like can be added too like Italian seasoning, or even Moroccan seasoning, that's the skillet version I reckon, but for the casserole you can add boiled potatoes or even better hash browns instead of noodles or rice.
    Spaghetti squash can be used too, I was going to say eggplant, but that's a no-no in your case.
    Spaghetti squash can be used for your mac and cheese, obviously spaghetti, and many other sauces you can flavor them up with, or just butter and spices.
    Why do you not eat bacon???
    You're obviously not Jewish.
    Not poking a stick at y'all, just curious.
    Your diet(s) are ultimately your business, so if you don't want to share why, that's your prerogative.
    But I have to say this, y'all would be better off eating beef bacon, it's a lot healthier than that extremely processed "turkey", and you can smoke beef bacon too, it's cheaper and tastes a lot better too.
    Salmon patties are always a big crowd pleaser around here.
    Just about everybody makes them the same around here, might use different amounts of ingredients, but it's all the same.
    Again, no measuring, but mine has the canned salmon - bones removed, loads of chopped onions, eggs, salt, pepper and cornmeal, fry in desired fat.
    I have added parsley flakes to the mix for some color, some folks liked it, some preferred the old way.
    Many folks are deeply rooted to their traditional cooking styles and recipes and will rarely venture away from it unless they try something really good from somewhere else, but when you have a medical issue that so rudely overtakes your kitchen, you've gotta be open to other ideas, at least for a while.
    Not saying you should try every idea folks might offer up, but if it sounds good and you're getting desperate, give some of them good ideas a try.
    I know y'all said you can't taste the coconut in them salmon patties, but that really threw me off, but I'm not a fan of coconut either.
    I imagine a lot of folks are thinking somebody should just shoot them now if they can't have broccoli, well I don't want to be shot, but I sure would miss it, even though I couldn't stand it when I was a youngun, I can't get enough of it now, cheesy, plain or in a casserole.
    Duck eggs are always nasty.
    They do taste different when you want a boiled, fried, poached or scrambled egg, but you'll never know the difference when baking with them.
    We once tried to build chicken coops with some PVC pipes that were given to us, we surely didn't buy them, and even though we'd been well known for building some of the best coops in the county for years, them PVC coops didn't last no time, but they sure did waste a lot of time putting them together, constantly repairing them as far as they could be repaired, and we thought they were ugly too, but on a farm you want something sturdy, and them things are done as soon as a goat jumps on top of them.
    The calf, (?Spruce?), is adorable, love to watch them when they play.
    This here is an additional cornbread idea, it might be out there for some folks, but we've been doing it since I come up with the idea when I was a youngun, and lots of folks around here have done the same, or similar.
    We had leftovers from a pot roast with carrots, onions and potatoes, daddy was heating it up, then here comes company with a bunch of younguns in tow, and daddy was stumped.
    I liked making cornbread in one of them sectioned cornbread skillets and would pick a reason to use that skillet when I could.
    So I told daddy, let's put a little bit of the meat and vegetables in each section with the cornbread batter, he stood there blank for a second, then said do it.
    It was absolutely tasty, of course, but seeing how our kitchen table was so small, we were able to feed that enormous brood, which was bigger than yours, on the front porch and with very few dishes to clean up.
    Of course I had to make several batches with our two sectional cast iron skillets, but it worked.
    And after that, whenever we had just a little bit of some really good leftovers, they got stuffed into some cornbread.
    You can do that instead of making burritos or wraps, any meat, any vegetables you like, and cheese too.
    I've even drained leftover stew and folded that in the batter, then heated the gravy from the stew for pouring over the top or dipping.
    It might seem weird, but it sure is good!!!

    How did you know the family member had food allergies? Was it skin issues, asthma or something else? When I was 14 I got asthma twice a week apart as we went to fairs and I was near the hay. When I was skin tested, all the foods I was eating at that time, I was allergic too. After awhile I could eat those foods again. Also, hay, grass, ragweed, mold, trees... Had allergy shots for many years and then used vitamins, etc, when I was old enough to know better. But, I still have exczema which comes and goes. That's in the family as many family members have had it over the years, from my mother's side. Stress also flaisr our eczema up. Blessings.. LOVED the long video and seeing the farm animals, hearing them moo, the turkeys especially and all the animals. You will probably get turkey babies eventually. Wouldn't THAT be fun??

    I absolutely loved this video! Beautiful weather and just a beautiful day. I would give anything to start my life over being one of your children. Just the morning scene alone is so calm and peaceful, no rushing to get on the bus, no rushing because Mom will be late for work. There is no mad rush to find their homework, brush their teeth and get dressed. Just everybody moving at their own pace, they know what they're supposed to do and are doing it. So sorry about your dear friend passing away. My heart aches for his poor wife. That would be so difficult to move through. Cheri

    Anna's hair is beautiful! I love long hair but don't look good with real long hair. You'll have to let us know how Sara is doing on her studies on nursing. And Sams schooling too. You have such smart kids i was surprised to see that one of the boys knows how to sew. I think thats great cause you never know when it comes in handy.     I have been diagnosed with Celiac. It's was a nightmare at first, but is easier now. It requires change but you get used to it. I feel so much better.

    One thought, I have a cousin had many grains eliminated when he was young, but could have rye flower. Also, he could have powdered milk. The process of drying took something out of it. Mind you this was in the late 1960's and the 1970's. Just a thought.

      Allergic to wheat .mainly makes me itch and ingest to much mess with bowel but I love rolls .rye bread doesn't bother me at all even sour dough seem to be good

    have you thought about a 3 tier bunk beds ... you can make them yourself... give the girls more room in their room... the bottom bunk is on the floor so the tiny big girl could sleep there....

      We ordered them from Azure Standard one year and grew our own slips for planting out in the garden. They grow really, really well on our property. :)
