I'm very doubtful that this can replace ,,time aging" because when you use wooden barrel the small pores contained within the wood help to evaporate some of the harsher and more volatile compound like acetone that are other wise present at bigger concentrations in unaged liquor. But I'm also sure that it will still taste really good, and you can extract the methanol and acetone with different methods.
They briefly state that their results matches exactly the chemical compound of "traditionally" aged rums, so I'm not sure if that would be something to worry about... (:
If you distill it right, you've discarded most of the methanol, acetone et cetera. There will obviously always be some methanol and acetome left, but with so little present it won't evaporate much either. What you lose might have the same proportion of ethanol to acetone and methanol as what you put in, or worse, you might be losing more of the ethanol than of the methanol and acetone concentrating the unwanted volatiles. Obviously there will be differences, and this certainly can't compete against the real stuff at tge same price point, but it can perhaps provide 99% of tge experience at a much reduced price.
It's more about Psycho, people will never accept coz its not natural. Waiting 12 yrs for a whisky to mature is so satisfying psychologically. Its not just abt taste, its about time, a long time it spent before touching our mouth.
The whole point is to enjoy a dram of what was made before you and to make for the future. Leave to American capitalist to come up with speed liquor with no soul!
Ok imagine this process for a weak. Then left to age in a barrel for a decade then. After all the process is simply accelerated by light. I dont think it will replace barrel aging.
Home distillers use this method all the time to age their spirits now days with items you can easily purchase on amazon.
