Good quality moonshine is crazy stuff. I once had a sip of some 120 proof that was Apple Pie flavored. Tasted like I was drinking a pie, ZERO alcohol taste and smooth as silk

The Henriod Sisters and Major Dubier would be proud, true dedication to the magnificent craft of distilling true absant is on display here and they deserve grand success. Wish the Absinthe Salon was still open in Sydney so I could serve this drop, what an amazing story behind it!

I live in Switzerland, just two hours away from the Val-de-Travers where the original Absinthe is distilled ( clandestinely until its legalization in the early 2000s). Is an old tradition that requires years of mastering, that has nothing to do with sugar cubes, or greenish cheap drinks, and seeing these two men from across the ocean respecting this drink is a wonder!

In 2005 some scientists deemed the experiments they did back then invalid, since they basically injected animals with thrice the quantity of the toxic actually contained in Absinth. If you travel there you can even find secret Absinth fountains in the local forest, where you can taste Absinth for free directly with the fresh source water.

funny thing is, Richard mentioned that nobody in his family made distileds, his grandpa only made wine (which is a very very different process). So really, these men are the start of their own dynasty.
Moonshine has always been in jungle since back then. That's why you always hear the story about them and the feds. Anyway I used to drink Moonshine because it get me drunk so fast and hard. But not enough that I don't get drunk and past out. It's a creeper yet you can control the amount.
Literally found myself doing the same thing - I work in biotech though so a lot of the terminology and methods they were using were similar to once we use in the lab. Wonder where'd they learned it

I'm curious if when they upscaled the herb mix they measured by volume rather than weight. I mean could be any number of things: if any of the herbs dried out before being measured, humidity at the time of measuring, etc. Upscaling really highlights any tiny errors that go unnoticed between smaller batches.

Temperature and duration. Going up in volume is technically challenging. Doesn't work like a oven casserole. Document your batch or you'll never get repeatability. These guys are serious. Best of luck to both of them.
I would love to see a full on series with these guys just making different types of alcohols. They are series to their craft yet they still have a good sense of humor
Absinth is no joke. I was turned onto it over in Spain. Some of the "botanicals" will definitely get you a nice buzz on. I dig these two good ol dudes. You can tell they've been doing this together for a minute.
I once made pastise, which is a similar drink. I redistilled the first run with only anise to get the "milking" effect and then I added the other herbs. It turned out real good and it was easy to "control" the flavour.
I love how it takes a show about making alcohol to break the mould of "everything goes right 100% of the time" or "comedically bad things happening all the time" that every other reality show does

Well Anabelle, that's because Australia never had a Country wide Alcohol Prohibition in the early 1900's. The US outlawed the consumption of it from 1919 to 1933, oddly 4 years before they went after marijuana. Moonshine was popularized during prohibition, but never completely faded from our culture after prohibition ended.
Richard and Craig are my favourites 100%, as a non American watching, these guys seem the most rational and intelligent of all the shiners so far, I really enjoy watching them.
My great grandfather and his sons (including my grandather) were moonshiners/bootleggers in Louisiana during Prohibition. I always heard stories about my great grandfather buying a Buick in the 1930s but didn't know how to drive. I never knew how a black sugar cane farmer in rural Louisiana was able to buy a car during the Great Depression. Well, my dad accidentally let it slip a few years ago. It was funny because all my older relatives told the story about how Big Daddy (yes, they really did call him Big Daddy) bought a car, couldn't drive, and ran it into a ditch. They never said how he got that car. I still don't know how he got away with it and all of my dad's cousins are gone, so I'll never know. It's a great family story.
My grandmother ran truck loads of it, was caught by crooked cops multiple times. Dead men dont lie. Built houses with trap doors into a liquor basement/bar. I grew up running into people who only knew her by her alias. 180mph police chases etc She was a good woman, who would give a stranger the shirt off of her back and the last meal she had. Literally did so, many many times.

Once an episode is aired they can’t do anything because they need evidence. They can’t prove what they’re viewing is actual alcohol being made unless they’re catching them in the act.
As a chef I recognise those immediate issues when scaling, and without a truckload of experience there's just no way to get it right the first time, it's all trial and error. Different ingredients just don't scale the same way, ESPECIALLY when it comes to aromatics, you need to scale up linearly not exponentially, that means going form 1 litre, to 2, to 4 to 6, making adjustments as you go and taking note of any patterns that emerge and applying that knowledge. You end up wasting way less resources this way.

I was never a fan of the show Moonshiners and the "characters" on there. However, these 2 guys I would keep watching. I thoroughly enjoy watching them apply their craft.

Hung out in Mexico City and fell into this up scale restaurant - that had two stories and a nice layout. Asked the bar keep if he had any Absinthe and he didn’t have any idea as to what I was asking for. But as luck would have it, at the end of the bar was a group of old bottles left over from their most recent remodel and low and behold there was an old bottle, so old it still had a layer of dust on it. He blew the dust off it and we were in business. Except he didn’t have a clue as to how to serve it. So I asked for a few of the requirements (clear water, sugar cube, slotted spoon.) he comes back with sugar in a packet - Oh no, says I and he sends a runner to get the right kind. So I start to pour and dribble some water over the cube and see the clear liquid transform into a milky green. Now this is a pretty good size spot, so when the mixture starts to change and get cloudy, I hear all these oooohs and ahhhhhs from behind me. Turn around and every waiter in the joint is standing there watching how to set this aperitif up. That meant no one in the joint was being served. The bartender had called every one over to learn how to enjoy their new find !!!
Absinthe wasn't purer or stronger back in the day, most old timey absinthe had whatever they decided to throw in it, including things that were absolutely poison lol

having spent time with lots of old timers, I appreciate the dialogue between these youngins describing the hues and what might be contributing to the issue. You get a sense real quick they know 'country style' what they're talking about and could easily match wits with any other producer.

Man, I remember when I was in the army I bought this wicked expensive bottle of french imported absinthe, and me and my buddies drank it all in doing raw shots straight from the bottle; no sugar cube, cold water, no fancy glass, nothing... And this was mine and my buddies first time drinking absinthe (it was the real deal too), now seeing this and how these guys properly taste and drink it just makes me realize how I wasted such an expensive and _rare_ product with me and my fellow grunts treating this fine french mademoiselle green fairy spirit like a cheap Jose Cuervo hooker from TJ w/no salt or lime 😂

I'm curious if when they upscaled the herb mix they measured by volume rather than weight. I mean could be any number of things: if any of the herbs dried out before being measured, humidity at the time of measuring, etc. Upscaling really highlights any tiny errors that go unnoticed between smaller batches.
I swear they need to make a show about the people who buy it and consume it after it's taken from these guys that will be a good show

I once made pastise, which is a similar drink. I redistilled the first run with only anise to get the "milking" effect and then I added the other herbs. It turned out real good and it was easy to "control" the flavour.

Well Anabelle, that's because Australia never had a Country wide Alcohol Prohibition in the early 1900's. The US outlawed the consumption of it from 1919 to 1933, oddly 4 years before they went after marijuana. Moonshine was popularized during prohibition, but never completely faded from our culture after prohibition ended.
I don’t know who they are but I want to hang out with them. Down to earth dudes. They really put their heart into their work.
More times than not, you have to adjust a recipe you’re trying to scale up. Seems like pure linear math but flavors don’t always play by those rules

My great grandfather and his sons (including my grandather) were moonshiners/bootleggers in Louisiana during Prohibition.
I always heard stories about my great grandfather buying a Buick in the 1930s but didn't know how to drive. I never knew how a black sugar cane farmer in rural Louisiana was able to buy a car during the Great Depression. Well, my dad accidentally let it slip a few years ago. It was funny because all my older relatives told the story about how Big Daddy (yes, they really did call him Big Daddy) bought a car, couldn't drive, and ran it into a ditch. They never said how he got that car.
I still don't know how he got away with it and all of my dad's cousins are gone, so I'll never know. It's a great family story.
My grandmother ran truck loads of it, was caught by crooked cops multiple times. Dead men dont lie.

Once an episode is aired they can’t do anything because they need evidence. They can’t prove what they’re viewing is actual alcohol being made unless they’re catching them in the act.

As a chef I recognise those immediate issues when scaling, and without a truckload of experience there's just no way to get it right the first time, it's all trial and error.
Different ingredients just don't scale the same way, ESPECIALLY when it comes to aromatics, you need to scale up linearly not exponentially, that means going form 1 litre, to 2, to 4 to 6, making adjustments as you go and taking note of any patterns that emerge and applying that knowledge.
You end up wasting way less resources this way.

It’s quite popular here in the south, I have uncles and cousins who do it here in southern AL. Not too big a deal down here, can get it easily if you know the proper folks

Hung out in Mexico City and fell into this up scale restaurant - that had two stories and a nice layout. Asked the bar keep if he had any Absinthe and he didn’t have any idea as to what I was asking for. But as luck would have it, at the end of the bar was a group of old bottles left over from their most recent remodel and low and behold there was an old bottle, so old it still had a layer of dust on it. He blew the dust off it and we were in business. Except he didn’t have a clue as to how to serve it. So I asked for a few of the requirements (clear water, sugar cube, slotted spoon.) he comes back with sugar in a packet - Oh no, says I and he sends a runner to get the right kind. So I start to pour and dribble some water over the cube and see the clear liquid transform into a milky green. Now this is a pretty good size spot, so when the mixture starts to change and get cloudy, I hear all these oooohs and ahhhhhs from behind me. Turn around and every waiter in the joint is standing there watching how to set this aperitif up. That meant no one in the joint was being served. The bartender had called every one over to learn how to enjoy their new find !!!
