    It's was actually cloudy when we did this one but since we are exposing for the foreground and it's all backlit, it looks pretty glowing / sunny!

    it was a little bit of gas (well fog from gas leaking)
    our iSi has been used so much the gasket leaks a tad on occasion

    How long does the egg white in the foam hold consistency, does the lemon juice not start to break them down?

      +anubis282 We haven't found a problem with the acid in the lemon juice breaking down the egg white so it should hold for quite a while (even overnight).

    can you do this exact same recipe with lime juice instead of lemon? for a yuzu lime foam to top a mexican beer.
