  • Today I am sharing a very meaningful recipe... and that is for Bruschetta Chicken. This is THE DISH that got me grilling on the Weber Q again. I first discovered this recipe on 'The Fire Escape Griller' (now Gallagher's Grub @GallaghersGrub). At the time, I had recently pulled my Weber Q out from storage after skipping several seasons of grilling, and this was the recipe I decided to try as my foray back into grilling regularly. And I never looked back. Check out the original dish here:

Hi Jerry - yet another great and healthy inspiration: Thank you for this one. I'll definitively try this soon, 'cause it's a perfect summer dish, easily prepared and just perfect for the baby Q. Keep it up, please,
Besides that: I just love your easy-to-make recipes without the need of finding some sort of china town shop to get some fancy ingredients!!!

Thanks! Like all the others I’m sure you will really enjoy!
And yup, I don’t often use weird ingredients that are hard to find. Although hard to find might be relative depending on where you live as well.

Thanks Chicago Griller for the great videos!! Just grilled my best boneless chicle breasts on my Q using your techniques!!! So tender and yummy. I used soy sauce, honey, garlic and onion powder. Thanks!!!!

Yes, this method of thinning and evening out boneless chicken breasts is definitely the way to go for perfect cooking on the Q. Super glad to hear it worked out for you as well. Happy grilling!

When I cook chicken breast, I am pretty lazy on the grill, I go skin side down, low temp for about ten minutes, check temp, skin protects the meat. Equals nice juicy thick chicken breasts

I guess you could take the cheese off of this one, but then it wouldn't be nearly the same...
