I'm not one of them, but i know the rule that the next age that leaving you with a few resources generally is not a good option. 3) About Demos. I havn't ever seen this campaigns, but i'm sure there must be something that worth making a walkthrough. I just need to see these campaigns.

When I was playing the Elam was already in Bronze Age and Akkad immediately built a tower near my town when reached Tool Age and it's good thing I was in the Tool Age, too.
After years I finally realized, if I build in the town center on top of the bushes and then conveniently surround it with warehouses, the enemies will focus on destroying these buildings, this way I only need to keep the two villagers repairing it while I convert the soldiers. This way, not only can I advance through the scenario, it also makes everything extremely easy, even in the hardest and fastest
Also, a final question: what do you think of the Demos (both AoE and RoR?) They have campaigns that you dont have in the full game, and I thought them pretty difficult, especially the RoR demo last scenario, in the city of Carthage
They made this Misson way harder In the updated version of AOE, the red player advances to the Bronze age very fast and then spawns a ton of priests and chariots.
I preferred villagers that were close to the priest or my TC. Also there is no need to wait until it collect food, I need to convert any villager as soon as possible. But yeap, you are right, given other things equal we need to convert those who carry some resources. I checked the video. I failed only with villager number 2, I could try to convert another one. Other converted villagers were very close to my TC or to my priest.

In my gameplay it helped to envolve as fast as possible into tool-age and then everything got easier after building a wall on the river. Behind the wall I build towers and I could envolve the rest. Its very smart to use houses and other buildings to protect! :) But to be honest I struggled over an hour how to beat this mission. I had a similar concept like you + the wall on the river but it still took several attempts after it finally worked. Sometimes my pope couldnt convert the yellow villagers. It took ages sometimes... an other reason why this mission failed on my end.
I found a trend; it looks likes the best players, like you, just wait a lot before you evolve to the next Age. I, the noob, always go for bronze as fast as I can :( That, as I already experienced, leaves me with few resources once I get there
You must have different version of the game because when I can priest enchant worker that workers attack my priest. Thats very difficult level. All next levels in this campain I get without cheat. Only in this I use cheats.

When you play on hardest, red attacks so often and spends so many resources that he doesn't even reach the bronze age

you play easiest or easy difficulty, change to moderate or hard
