Schmaltz is key. It's like Mexican food without lard. Still tastes good but without it there is a real difference in flavour. I have a really old recipe for "southern fried chicken" (ex's grandmother) and the recommended fat is lard; bought by the gallon.
I hate to break it to you but "schmaltz" is fat rendering and categorized by the source (pork, chicken, etc). Yes, lard is mostly derived from pork thus the Mexican pork flavor vs this obvious chicken fat "schmaltz". My grandma in Germany kept her schmaltz, rendered from goose, right on the side of the old stovetop to dip into whenever needed instead of butter or oil.
I may have a ball of milk bread dough rising in my kitchen just to make this recipe tomorrow... Update : I've made this recipe three times now and it's SO GOOD, thank you Eric!!
