    First night I made the
    FIESTA CASSEROLE: about a pound of ground beef
    2 peppers (chopped or sliced) 2C salsa 2C frozen corn, thawed
    1 can Aylmer's Accents Tomatoes, undrained 12 soft tortillas (6") or
    you can also use hard shell as well (my preference)
    your favorite shredded cheese
    Preheat oven 375. Brown meat with the peppers. Drain. Add peppers, tomatoes and corn. Bring to boil.
    Spoon some of the meat mixture to the bottom of a 13x9 baking dish. Top with your tortillas. Spoon half of the remaining meat mixture. More tortillas, then the remaining meat mixture. Top with shredded cheese. Cover with tin foil. Bake for 25-30 minutes. If you would like, after the 25 minutes remove the tin foil and add more cheese. Let rest 5 minutes.
    CHICKEN PEPPER PASTA:
    olive oil 3 cloves of garlic 1 can Aylmer's Accents Tomatoes
    1 or 2 boneless skinless chicken breast cut into bite size pieces
    1 of each, carrot, onion 2 peppers , chopped
    Pasta of your choice 1/3C parmesan cheese
    red pepper flakes to add spice (optional)
    Heat oil in frying pan and cook the chicken with the garlic. Cut up the carrots, peppers and onions. Add to the frying pan with the tomatoes and pepper flakes if using them. Cook until tender.
    Bring water to a boil and cook the pasta
    .
    Stir the parmesan into the sauce. Spoon over drained pasta.
    To add really amazing flavor mix in shredded cheese and melt some on top of the pasta. Enjoy.
