    1 whole wild duck (any puddle duck)
    Kosher salt
    Fresh cracked pepper
    Garlic powder
    Supplies:

    Very nice!!!
    The only possible negative thing I found from this video... Is that it quickly made me crave my next duck meal again!
    Nothing beats a nice seared wood duck breast in my opinion. Top it off with some red wine reduction and juniper berry sauce, delicious my friend!!!

    Great Video....I've never known the proper technique. The hubs is a duck hunter, but I always questioned his culinary duck skills. 😄 I'm a farm girl, so I'm not scared of red meat...but I always have questioned him on under-cooking it. You saved his man card with this video! 😅 I ALWAYS thought he under cooked it.

      Haha I’m so happy to help him out! I made a point to talk about that because its been a topic of concern every dang time I cook duck for people. It’s hard enough to get people receptive to eat something wild, versus store bought, and then they see that it’s ruby red. Also, if you cook it past medium the flavor turns very…off, too, so you dodged a bullet!

    Doesn't the legs over cook?

      They don’t dry out thanks to how they fold into the body shape once you spatchcock it. If the drumsticks are too exposed for your taste regardless, just put some small tinfoil over them and they’ll be fine.

    8 months ago so it's probably been a long time since you checked this video hoss, last time I ate duck and prepared it it had this very nasty swamp water taste to it. So the salt brine it'll take care of that? Y or N?

      No worries, I’m always checking my comments! The brine will make a huge difference in off tasting duck, but also make sure you’re cooking the right type of ducks in the first place. Diver ducks have a swampy flavor because of their feeding habits, so focus on puddle ducks. Thanks for watching and leaving the question!

    I accidentally made a huge cut into the meat. Can anyone tell me how this will affect the cooking process/taste? Did I ruin my duck?

      Sorry for the late reply. I would assume it wouldn’t ruin your duck. That deep cut section may get cooked a bit more then elsewhere but I’m sure there will be plenty of good meat at the right temp left on that bird. Please let me know how it turns out though and thanks for watching!

    Yes I always say eat duck medium rare.. any temp longer will make it chewy and unpleasant

    Do not eat the raw poultry!
    Even if it's duck, it should reach 75°C (165F) in the oven. Otherwise - it's dangerous. If you're pointing at 145 or even lower - make sure, it's for long time (eg. sous vide for 2-3 hours)

      That simply does not hold true for duck meat like it does with chicken or turkey. As stated in the video, wild duck is a red meat and cooks more like beef than chicken. Cook it too long, and it will taste like liver every time.. ask me how I know !
