So I just got some duck meat the other day and I have been scouring the internet for some ideas and by far the Duck Commander UA-cam page has delivered. Thank you Justin Martin for the ideas and cooking / grilling videos. Cheers!
I've done that same thing with a deer loin. First I seasoned the loin with salt, pepper and garlic. Next I wrapped with peppered bacon and put a local sweet rub over the bacon and smoked/grilled. Cooked til medium well and enjoyed with a whiskey!
I am a big hunter and Fisher but what you guys need to try is deer sausage butterfly them cream cheese in the middle then add the bacon and on the bacon put some roasted red peppers and yellow

Used a splash of lite soy and low sodium dales and cayenne and amplify. Then a killer honey bee seasoning vs Honey moneycluck towards the end. Then hot honey vs rib sauce. Other than that followed the recipe. Half and half gwt breasts and Woodies. I overcooked by about a minute since grill burners and grate were new. But man o man!!! Some kind of good💪
That makes my mouth water!!! Try adding Mr. Yoshida's Sweet Teriyaki to the marinade and I promise you won't regret it!!! 1/4 Soy, 1/4 Worcestershire, and 1/2 Teriyaki

Best is to beat them then with a tenderizer, soak over night in butter milk, rins then dredge in fresh buttermilk then seasoned flour then buttermilk then seasoned flour again then deep fry. Better than ckicken fried steak.
You gotta try the sweet chilli sauce from Panda Express....... it’s a great glaze. Old man use to make jalapeño pepper jelly and sell it at our local Ace hardware and the Panda Express sweet chilli taste just like it!
you should do your own cooking show.. with you and maybe some cooking guests that know wild meats... so hard to get good recipes with game meat because they are not the same as farm raised. great idea.. gonna get the smoker roll'n. ps... we only say "really cold" when its -20 in Wisconsin lol
Not to give the same old answer, but it depends on the duck and how it was cooked. I’m far from an expert but from my own experience, duck can be one of the best or one of the worst meals you’ll ever eat. Get the right duck. Cook him appropriately.
Get some fish my preferred favorite is walleye use franks red hot at the egg wash and as the dry batter mix 50/50 all purpose flour and drakes crispy fry mix season the dry mix to your liking when finished frying add lawrys seasoning salt on top best fish you will ever have
Okay we have some farm ducks we need to dispatch. I’ve got some Swiss, runner, and khaki Campbell. Will this recipe work with them? Ya’ll know duck and how to prepare it best.
What kind of siding do you have on your house? That grill putting off that heat next to the siding and not char or melted it has to be concrete or some kind of stone siding
Awesome recipe there Martin. I do something very similar. Woodduck and teal in central Minnesota. Cream cheese, garden jalapeños, bacon wrapped. I'll give them a 5 minute smoke on the pellet grill before final cook. Have a local BBQ company that makes a great sweet taste sauce that goes great with this. And best part they are kid approved
Martin thanks for the new mods to the duck breast I already favor. I could have had a little longer exposure to the meat when you cut in half to get a visual on the meat color and glaze. I realize you needed to eat em! God Bless!
I tend to use a slice of harder cheese, like Jack or Pepper Jack with my poppers/wraps, but may have to pick up the Philadelphia Jalapeno Cream Cheese for the next time I do them!
I know people say not to cook duck all the way. But In my house we eat them fully cooked. Maybe were just used to it. My kids love bacon wrapped duck and dove.

Use maple bacon. Duck and maple compliment each other. I make duck bites all the time. Just a little tip. Hope it helps.
