4 ripe tomatoes, diced
1 small red onion, finely chopped
1-2 jalapeño peppers, finely chopped (seeds removed for less heat)
1/2 cup fresh cilantro, chopped
2 tablespoons fresh lime juice (about 1-2 limes)
1/2 teaspoon salt (adjust to taste)
1/4 teaspoon black pepper (optional)

Hello Rik! I have worked in several New Mexico restaurants over the past 30 years & have made Pico multiple thousands of times. You are spot on! You say it however you like. It won't make a difference to the taste buds. I put it on eggs for breakfast. It's also fantastic in quesadillas, nachos, burritos, enchiladas & more. Add melted cheese to it & you get an awesome Queso dip. It's so versatile. Thanks for all the great videos. You keep it simple, like it should be.

I realized a little while ago, why this channel appeals to me so much. It takes me back to my childhood ( Scottish/English parents/cooking/nostalgia).
But as a child, I used to RUN home ftom school, to watch Graham Kerr, oohing and aahing as he cooked. Ohhh, I so wanted to be there, and be the one he invited up onstage, to sample that delicious delectable delightful thing he had cooked! 😆

I had some good friends from Honduras that showed me this recipe. The only thing I do differently is I remove the seeds from the Jalapeno. I don't like the heat. It is a very good recipe. Delicious. Lesson learned, wash your hands because the jalapeno will burn if you touch your skin or anything. 🤗🤗🤗

LOVE LOVE LOVE your videos..in SoCal the double L in Spanish makes it PEEK-O-DAY-GUY-O. Not a big deal but that's how we pronounce Pico de Gallo. Everybody still knows what you're talking about, just a local thing! No matter how you say it, it's still deliciousness!

Thank you for sharing how to easily de-seed the tomato slices and the hot peppers. Glad to see your onions occasionally can contain surprise issues of tired sections as mine do even when the outside looks fine. Nice to have another option with tomatoes to ensure no food waste and because variety is the spice of life. At retirement age I am finally exploring the world of mildly hot peppers as my British & Welsh heritage did not include any hot peppers in the cooking. A tiny half teaspoonful of horse radish was as hot as we had once a week with Sunday beef roast.
The world ended at HP sauce, as far as my Dad was concerned! Lol
