Hey Max, so I was watching one of your old videos about cooking Elk inside of salt, and I had an idea, one of my favorite dishes that my mom makes is a whole chicken covered on salt, it leaves a really crispy skin, juicy on the inside and really flavorful, if you could try it out someday in one of your videos would be great
Love duck when I can afford it, and the dry age looks awesome. Best duck I've had so far was cooked skin-side down on a salt block then flipped for a 30 second sear on the exposed meat. The rendered fat dissolved some of the salt and left the rest of the cook essentially frying in salted duck fat.
Dry age duck is definitely a favorite of mine. Took me a while to really dial it in. I like to sugar blanch the skin quickly before the dry age. I also don't find going over 10 days makes much of a difference.
While we probably won't do dry aged, as we are a bit intimidated by the margin of error that comes with the process, my family is definitely going to be trying a chili crisp duck for X-mas dinner

The secret to get the ultimate crispy duck skin is to separate the skin itself from the carcass. Seal up the holes drop the top and bottom of the duck and then pump air between the skin and meat to separate it. Then just bake it.
