Don’t bother making menudo if you aren’t going to use pata. Put them in a cheesecloth and throw them away if you must, but menudo needs pata.

I like to use the pressure cooker to cook the tripe.Cook for 18 mins.Comes out perfect 👌

Back in the day there was no such thing as red munudo. In Manalisco(Jalisco)we had white menudo back in the old day.

hello, yes it's always good to start boiling your water first, you could also add your onion and garlic for more flavor.
Is the chilly spicy?
Nope those chilies are only for color and flavor.
