I'm from San Antonio Tx. This is the menudo you will find in most of the local Mexican eateries. Love this recipe using either your home made spice recipe or store bought & either method...in the instant pot or stove top. And so glad you mention the variations on chili ingredients & quantities. I don't like a lot of heat & too much chili gets to my gut, so I've always cut it down to about 1/2 of what a recipe calls for. THIS is a great recipe. (I ate menudo & fell in love with it when I was 17. A wonderful woman, my husband's bf's mother took me to her kitchen & taught me how. It was my first authentic mexican recipe! 40yr ago. So grateful & thankful to the late Mrs Lopez ❤️). Thank you for sharing your instant pot instructions, which is what I actually came looking for.
As a white guy whose brother and sister were raised by a dad who loved menudo, i am always thankful for every time I get the chance to have it. I did try making it once after a birthday hangover around 1980, and the smell of boiling it for three hours was too much. Maybe one day I’ll get the chance to try it again. Long live menudo!!

Absolutely love stainless steel, and will not use a coated product again.This pot has many settings and many buttons, and i need to sit down with a manual to figure out which setting to use. I used the basic functions, and even though i am not technologically skilled, i turned it on and assembled it without any help.Very satisfied with this product overall.

I have made menudo a few times but I haven’t in a long time because it takes forever to cook. Now I’ve used this recipe SEVERAL times and it’s the only way I’ll make menudo now. It’s just my husband and myself and the crazy 1/2 Mexican man doesn’t like menudo so I end up freezing at least 1/2. Which is fine with me. This recipe is delicious!! I’ve used a lot of your recipes and this is one of my favorites!

I love the fact that u can make menudo in the instant pot, will try your recipe but I will use my own recipe for the the red chile puree I just use dried New Mexico chile, garlic & salt!! Oregano alway tastes bitter if you boil it in your recipes so I just add it @ the last so it doesn't taste bitter!! Thx for your tips

I tried your recipe, except for the beef bouillon, I didn't have any but I threw some beef bones in there for flavor. This was fast and easy and now I can have my Sunday Menudo. I'm on the border in Arizona and boy do we love our menudo here!! I love how quick and easy this is compared to the other way I make it with the chile sauce in my Instant Pot. Since my mother won't eat the tripe I've made vegetarian menudo using something called "white/snow fungus" which is basically a dried white honeycomb mushroom that when re-hydrated and cut up has the same mouth feel and texture as the tripe. It's so close that my mother won't eat that either since it's so much like tripe to her. I have to top my menudo with the usual like you did and with cabbage, crushed chile pepper flakes, extra oregano and lots of Valentine hot sauce!

So I'm a fairly new subscriber, perhaps six months. I've tried a few of your recipes and they have all been great, just what I was hoping for truly brings me back home... I will always say I'm a Texan, once a Texan, ALWAYS A TEXAN! I live in DC and while we have perhaps every ethnicity and food available on the planet, one has to look for it. Making the food is not always the easiest or fastest. I just came across your Instapot Menudo recipe and it stopped me in my tracks!! So, lots will judge and I know I deserve it but I typically go to the store and buy Jaunita's Menudo in a can. Yes, NOT the best, but close enough. However, now knowing that I can do this in the InstantPot, that will make my life so much easier. I would NEVER use the powdered spice route, chili puree is the ONLY way to go; the flavor and smokiness of the chili are just unbeatable. As I am writing this, Pavlov is doing and I am salivating, cannot wait to try this recipe. I"m so certain it will be great, just like all the rest of your recipes. My thoughts and prayers go out to you and your family and all the other Texans in need. Please take some time and take a longgggg look at who is representing your great state and IF they are REALLY and truly doing what is best. If you are on the fence about it, take a look at your electric bill, and don't forget the miserable effects it caused. Be progress and affect change!! Oh me gosh so doing some Menudo Sunday with homney my fav and pigs feet. If you all have not had Menudo with Pigs feet you must try, its delish. A more sutle flavor.

It really is worth it. I can be used as a pressure cooker, slow cooker... I got one for my sister and she loves it! Useful for making tamales...makes the fillings in a matter of hours as opposed to days. Very convenient

Not sure if you know this, but you can set the lid in the side handles of the pot. Look at your lid, there’s something that protrudes one each side (not sure what to call it), and it fits perfectly in those “handles” on the side of the base. I hope this makes sense.

Hi, I am going to make your menudo this weekend but this time, I want to make it with the chile puree. Do I add the puree in with the uncooked tripe? And do I put all the puree, or just a certain amount?
The last time I ordered it from a restaurant, it was $12. a quart. in Texas. I like my menudo with beef feet, cook 1/2 hr. longer at the beginning, then add the tripe.. Regular tripe also takes longer than honeycomb because it’s tougher, but does not dissolve like the honeycomb. I also read that the oregano tastes bitter when cooked too long, so I add it when I add the hominy. I like Bush hominy; whiter and more tender than others.
Menudo without hominy or patas isn't menudo! :) And your chili puree for menudo is amazing! It tastes like my grandmother's recipe. The only recipe I use now. Thank you for the great video ❤️

But maybe the recipes vary from state to state, in Jalisco menudo has no hominy and theres blanco and rojo and also you pick your meat at the menuderia not only pansita and pata like here, you can choose from callo grueso, librillo, cuajo, pata, panalito and more, also there's onion limes and oregano at the tables to use as toppings not cilantro. Delicious.

It depends on the region of Mexico. The North of Mexico use hominy, Central and South do not. Most of the North like bolillos with menudo, the South of Mexico like corn tortillas with their menudo. It's all good.
Wow!! I love menudo but usually only make it for the holidays. I'll be honest; I find it a hassle to make, what with the 'prep' then boiling it for several hours you've pretty much lost a day. This would be an amazing time saver that would not require constant attention, (you could just set it and forget it!!). I don't have an 'Instant Pot' but I think it would be worth buying one to make menudo plus ALL the other things that you could do with it.... Anjelica, you might consider making a 'series' of Instant Pot meals adapting some of your amazing recipes; I think they'd be a big hit, just a thought....

I want to try this, but I wanted to ask a question. I love menudo and I mostly eat it at my favorite restaurant. I noticed that your final product does not have a deep reddish color. Does this make a difference in the flavor? I’m use to the broth having that dark reddish color. Like you could see the color coating the bowl. Thank you.

Menudo freezes up well , my family sometimes freezes it for another day when there's leftovers.

It depends on the region of Mexico. The North of Mexico use hominy, Central and South do not. Most of the North like bolillos with menudo, the South of Mexico like corn tortillas with their menudo. It's all good.

Wow!! I love menudo but usually only make it for the holidays. I'll be honest; I find it a hassle to make, what with the 'prep' then boiling it for several hours you've pretty much lost a day. This would be an amazing time saver that would not require constant attention, (you could just set it and forget it!!).
I don't have an 'Instant Pot' but I think it would be worth buying one to make menudo plus ALL the other things that you could do with it.... Anjelica, you might consider making a 'series' of Instant Pot meals adapting some of your amazing recipes; I think they'd be a big hit, just a thought....

I want to try this, but I wanted to ask a question. I love menudo and I mostly eat it at my favorite restaurant. I noticed that your final product does not have a deep reddish color. Does this make a difference in the flavor? I’m use to the broth having that dark reddish color. Like you could see the color coating the bowl. Thank you.

That would work for pozole. Menudo absolutely needs to be tripe im afraid. It's like making spaghetti with bread instead of noodles if yu get me

Gurl, you got me salivating over here. Your face said it all. I am making my menudo today, but I don't have an insta pot. Gonna cook it on the stove. I was searching for other menudo seasoning, besides my own, and your video popped up, which led me to this video. This is my first time to your channel and I will definitely be subscribing. I grew up in South Texas on a farm, and menudo was one of our staples for dinner. Your video brought back memories of my grandma and grandpa. Thank you for sharing and off to make menudo.

I find that the smell is less, but also the use of vinegar helps with the gamey smell. 😁
