Wasn’t even in the market for a Santa Maria, but this video popped in my suggested videos and is how I found your channel. Didn’t even know you were in Texas much less in the neighborhood next to mine so running into you was totally random. Anyway after our conversation I bought a Weber and a Gabby’s Grill Friday. I anxiously await its arrival. You sold me with it being relaxing mesmerizing and fun. Exactly what I need!

Great video on a very fun attachment. Happily enjoying my Gabby's Grills 22" and the 18" on my Jumbo Joe, as well as the griddle that Junior makes. He did a local run on his products down here in SoCal and he was great to meet and chat with. Proud to support a veteran.
While I had casually heard of Junior's Sta. Maria attachment through a friend for use on his 26", it was Troy's video and Phil N Florence videos using Gabby's Grills that encouraged me to pull the trigger. I also use his Smoke Bomb smoker box for the 22" kettle. Holds a steady 240-250 on half a chimney for 4 hours and only needs a few pieces of charcoal to maintain it after that, 3-2-1-style. Glad that you and Troy are collaborating over this and it's great to see your fellow UA-cam BBQ personalities showing support.

Aloha Rodney, Yeah, I wish I would have phrased it differently...or in this particular case...just gotten normal words out. It's not very expensive for what it is. Just more than I expected. Considering the guys knocking him off charge almost twice as much his prices are pretty reasonable. He'd probably save a fortune if he made it detachable so it would fit in a smaller box but I don't think I'd like that as much.

Really like this Santa Maria Setup. From my point of view it is very similar to the most old fashioned grill we use here in Germany. It is called Schwenkgrill, basically a pit with an open wood fire and a grill grate hanging down from a tripod. The height is also adjustable with a winch or chain. The meat looks awesome and tastes great. Greetings from Germany!

Good points. I keep my three in the garage. With nothing you will still get that light surface rust. I've been experimenting with spraying down with cooking spray after cooking. I don't have good enough data yet to say whether it helps or not. I got an interesting vid coming out I am filming Saturday you might light Justin using it.

I ordered one as soon as I saw Troy & James review his (actually that one) last year. I love cookin on it and it is so easy to use, and sits right on top of the bottom section of my WSM. I highly recommend. You.steaks looked delicious and the sausages knew what to do...get ready for the Pitmaster privilege.
Baby Back Maniac The 22” because it has more room for meat. The 14 is perfect for a single tri-tip, or maybe 2 people on a regular basis. Junior is a good family man, and builds these to last.

I spoke to Junior last year about his Santa Maria grill attachment. I have a couple of Ideals for some mods that I want to run by him and see if he can accommodate them. But either way I'm going to try and pick up one of these for the summer. I kinda want to get the 18 inch for my Jumbo Joe grill as I take that one when 8 go out and about. My 22 inch is the Performer so not really portable.
I've been wanting one of these bad boys!! I have an old re-purposed performer bowl (put my coppertop w/"P" vents in the cart) that I built into a backyard firepit that this would be perfect for. I could just use my wsm like you showed us in the other video but this would look much cooler in the yard.
Those things are awesome. I've been wanting to pick one up for a while... but I REALLY want the Mighty Mike, which is his 14" version for the Smokey Joe.
Hey Baby Back, what type of grill brush do you use to clean diamond shaped grill grates like the ones on the LSG and your weber kettle? Would the Kona stainless steel bristles less brush be OK?
I heat it up and use a regular Grill brush to loosen up everything and then I go back over it with a paper towel or cloth rag. It’s Not ideal but it does the trick
Justin, what an awesome video bro!!!.....Great humor you build into these. Mine sometimes gets rain and snow on it. So I keep it sprayed with canola oil.
I spray mine down too. Doesn't really prevent it. That said, it comes right off. I think I'd rather have a weber style grate if I had the option though for that reason.
Baby Back Maniac Junior built Joe a custom grate out of rounded steel hit him up and see if he would do it for you. I liked the grate when I was at Barbosa’s house. But my other ones are all like that. Even my Santa Maria Outfitters Grill with expanded metal.
Wow! I'm so impressed. Yeah, unless it's dark out, I record everything in 60 fps in case I decide to slow it down. I usually upload in 30 though. Most people can't tell a difference. Kinda like the time I accidentally uploaded in 720 instead of 1080 and it took 65K views before something notice. ;-) Good eyes, my friend.
A lot of people don't like the look of 60, but I do. I suspect most of your audience don't make videos so I'm not surprised they don't notice and wouldn't care. I guess that makes me a bit of a video nerd. And I'm okay with that. I almost always upload at 60 fps. 🙂

I've never owned one of these but I own a KUDU grill and love it.. It's basically the same method of cooking. I'd love to have one of these as well though.
Did you have to make any modifications for the gabbys grill to fit flush inside the Weber with the lid bale. On my 22 performer it seemed to not fit inside. It catches the lid bale bolts inside the kettle.
Used to live in central California, next door to Santa Maria. Miss it sooo much. Hit up Susie Q’s for authentic flavors and use red oak wood. Been thinking of grabbing one of these, thanks for the review. Loving the channel.
Since you cooking by the radiant heat from the fire, it seems like it should not theoretically be affected by the wind except that the wind will be cooling off the food. It is really windy here on the gulf coast. How do you think that would perform in the wind?
I honestly don't know. Frankly the idea of an open flame in a windy place makes me nervous ever since a friend in the neighborhood nearly burned down his house from a spark from his enclosed offset.
Baby Back Maniac Justin, you really can’t do bbq when it’s windy a light breeze is good but not heavy winds. You would want to move your pit to block the wind. Safety is a good reason but it just doesn’t work well.
Juinor Castro is as awesome guy. I bought one from him. He gave me his cell # and even offered to cut the shipping as he was coming to So. Cal. Timing was off for us, but the fact was he was willing to go the extra mile. This guy is awesome. He is a welder/ fabricator, a family man as well. His company is named after his daughter. I have several. Tell me which shots you felt really popped out at you and I'll tell you what camera was. This could be a fun experiment because I have my thoughts on the matter but I'd love to know what other people think.
I’ve been curious about these since I first started seeming them, but I believe there is concern about causing crazing in the porcelain finish when you burn full size splits in the kettle.
I could see that being an issue...especially since Weber is now saying lump charcoal can cause it. I try to keep everything off the walls of the kettle and more towards the middle. So far hasn't been an issue.

I still miss him, but over time the fond memories I have of him are accompanied less and less by the pain of loss and more by the joy of our time together. Wow. Really? I've been doing this for years. Aluminum melts at like 1200 degrees. How old is your genesis? Mine is about 4 years old. Wondering if they changed the design of the side table burner on the new ones. Thanks for the heads up though. Glad they took care of you.

It's a long story, but I no longer have my MAK. The short version is I think I got a bit of a lemon (wifi issues, flameouts, water leaks) and I probably spent 30-40 hours (and about $500 in wifi upgrades) working with their customer service before I finally told them I no longer feel comfortable recommending it. They were bummed but understood. They are as frustrated as I was that we couldn't get to the bottom of it. I offered it back to them (asked them to reimburse me for my expenses) but they preferred I keep it and we called it even. We parted on good terms. I wish it would have worked out differently. It was a heck of a cooker.
You should get one. You will love it. Plus they're so cheapOn Facebook marketplace, craigslist, and at garage sales.People report they find them all the time on the curbs for trash pickup when people "upgrade" their grills. they are so ubiquitous that sometimes they go unappreciated they are
California Costco’s sell a full sized Santa Maria grill for about 300 in the summer time. They’re nice. Had one for a couple years. I’m thinking of getting a 14 inch gabbys grill for my Smokey joe.
Yeah I've seen those. Unfortunately I can't get them here. I don't even think they're available in all the Costco's in California. Look like a great deal though.
Baby Back Maniac maybe you’re right. They definitely make it up to Northern California though. I think you’re in Texas? I’ve read somewhere (maybe on amazing ribs) that if you can talk to the Costco manager into ordering a few in they’ll sometimes do it and then it saves you on the freight cost which is a ton. Supposedly people in Hawaii have done it i think.

Hey let me ask, hows the flavor of the meat with the Santa Maria vs normal indirect cooking or even reverse searing? Does it come out differently?
The smoke profile is lighter and less acrid (some acridity is a good thing at times) than cooking in an enclosed pit.

Hey Baby Back, what type of grill brush do you use to clean diamond shaped grill grates like the ones on the LSG and your weber kettle? Would the Kona stainless steel bristles less brush be OK?
I heat it up and use a regular Grill brush to loosen up everything and then I go back over it with a paper towel or cloth rag. It’s Not ideal but it does the trick

I spray mine down too. Doesn't really prevent it. That said, it comes right off. I think I'd rather have a weber style grate if I had the option though for that reason.

Baby Back Maniac Junior built Joe a custom grate out of rounded steel hit him up and see if he would do it for you. I liked the grate when I was at Barbosa’s house. But my other ones are all like that. Even my Santa Maria Outfitters Grill with expanded metal.

Wow! I'm so impressed. Yeah, unless it's dark out, I record everything in 60 fps in case I decide to slow it down. I usually upload in 30 though. Most people can't tell a difference. Kinda like the time I accidentally uploaded in 720 instead of 1080 and it took 65K views before something notice. ;-) Good eyes, my friend.
A lot of people don't like the look of 60, but I do. I suspect most of your audience don't make videos so I'm not surprised they don't notice and wouldn't care. I guess that makes me a bit of a video nerd. And I'm okay with that. I almost always upload at 60 fps. 🙂
I like it too. I think it looks more real life. At the same time, I'm going to experiment with 24 just to see what I think of it. It's a fun hobby!

I've never owned one of these but I own a KUDU grill and love it.. It's basically the same method of cooking. I'd love to have one of these as well though.

Did you have to make any modifications for the gabbys grill to fit flush inside the Weber with the lid bale. On my 22 performer it seemed to not fit inside. It catches the lid bale bolts inside the kettle.
Used to live in central California, next door to Santa Maria. Miss it sooo much. Hit up Susie Q’s for authentic flavors and use red oak wood. Been thinking of grabbing one of these, thanks for the review. Loving the channel.

Since you cooking by the radiant heat from the fire, it seems like it should not theoretically be affected by the wind except that the wind will be cooling off the food. It is really windy here on the gulf coast. How do you think that would perform in the wind?
I honestly don't know. Frankly the idea of an open flame in a windy place makes me nervous ever since a friend in the neighborhood nearly burned down his house from a spark from his enclosed offset.
I will position it so the wind blows sparks towards my neighbors house. Like the ph arises asked Jesus, who is your neighbor?

Baby Back Maniac Justin, you really can’t do bbq when it’s windy a light breeze is good but not heavy winds. You would want to move your pit to block the wind. Safety is a good reason but it just doesn’t work well.

I’ve been curious about these since I first started seeming them, but I believe there is concern about causing crazing in the porcelain finish when you burn full size splits in the kettle.
I could see that being an issue...especially since Weber is now saying lump charcoal can cause it. I try to keep everything off the walls of the kettle and more towards the middle. So far hasn't been an issue.

I still miss him, but over time the fond memories I have of him are accompanied less and less by the pain of loss and more by the joy of our time together. It can still be tough sometimes, but I am comforted in knowing I will see him again. I pray for him every day and ask him for his prayers for our family still here. They had more of a grilled texture with more pull...Like PBC ribs only with a different smoke profile. They were great.

Great video. Word of caution you can melt the aluminum Genesis side burner with a chimney. Fortunately Weber only charged me $18 for a new one
Wow. Really? I've been doing this for years. Aluminum melts at like 1200 degrees. How old is your genesis? Mine is about 4 years old. Wondering if they changed the design of the side table burner on the new ones. Thanks for the heads up though. Glad they took care of you.

Hi, Justin great video. been wondering about the Mak pellet smoker, could you do another review about it. Do you still love it? any comments would be great. thanks
It's a long story, but I no longer have my MAK. The short version is I think I got a bit of a lemon (wifi issues, flameouts, water leaks) and I probably spent 30-40 hours (and about $500 in wifi upgrades) working with their customer service before I finally told them I no longer feel comfortable recommending it. They were bummed but understood. They are as frustrated as I was that we couldn't get to the bottom of it. I offered it back to them (asked them to reimburse me for my expenses) but they preferred I keep it and we called it even. We parted on good terms. I wish it would have worked out differently. It was a heck of a cooker.

IF you can find coastal live oak, California Red Oak, that's the preferred wood for this, but it's hard to find and often very expensive.
California Costco’s sell a full sized Santa Maria grill for about 300 in the summer time. They’re nice. Had one for a couple years. I’m thinking of getting a 14 inch gabbys grill for my Smokey joe.
Yeah I've seen those. Unfortunately I can't get them here. I don't even think they're available in all the Costco's in California. Look like a great deal though.

I think you’re in Texas? I’ve read somewhere (maybe on amazing ribs) that if you can talk to the Costco manager into ordering a few in they’ll sometimes do it and then it saves you on the freight cost which is a ton. Supposedly people in Hawaii have done it i think.
