yummo Gennaro. Buenisimo I would love to come mushroom picking. We have wild cypress mushrooms growing here in the national park in patagonia and pine mushrooms that grow around our town and in my garden. We always make Jamie Oliver's mushroom risotto recipe but I am sure he learnt from you how to make it. Delicioso! xx

i also love mushrooms! i am from austria/salzburg. there i know some of the mushrooms who you can eat. but only 5 different sorts of them. can you give me any tips where to get local information over addable mushrooms?

The level of responsibility cooking wild mushrooms for all of these folks. One bad mushroom can be a fatal mistake. Please be careful foraging! He does it *seemingly* effortlessly only because he's a professional.

i dont really understand why ud leave the mushrooms in there for all this time while cooking the rice. wouldnt it be much nicer to just sweat them and then add them back at the end? i can imagine all the life was cooked out of those ones.
two weeks after this risotto, and english will have already added some crap...gennaro lost time with them
