Protip: When making the broth, throw all of the ingredients into the oven on broil for a few minutes to give them some color, especially the vegetables. It will give the broth just so much more depth of flavor. Also never let the kombu boil when making your dashi, add the kombu to the cold water and remove it right as its starting to boil.

No matter how much you try to follow traditional recipe to a T and use proper ingredients, the fact there subtle unique differences in the vegetables, meat, noodles, ect based on where they are from, how they were grown/when they were harvested/the cattle was raised, the atmospheric humidity and temp, all make your dish NOT authentic in the first place unless EVERYTHING comes directly from Japan, why not have some fun with it?

And ramen is one of the examples where the rules are not there for a "tradition sake", but because somebody else have already experimented with achieving a specific results. You see, how many experiments does it take to make french onion soup instead of ramen? Is duck consomé with noodles a ramen? Following the technique without proper ingredients can get you much closer to the desired result, than not following the technique with proper ingredients. There is literally a video from Ramen Motoki making shoyu tare with dried tomatoes and beef jerky. There has been an enormous amount of thought poured into ramen preparation, and when you listen to some people that go deeper into the theory you find yourself in a place where you understand why you should not boil the bonito, why it takes at least 6-8 hours to make pork broth, why the components of ramen are prepared separately and composed only at the time of serving, and more. If you understand that, have fun and make it your own, use toppings you like and prepare them the way you like, mix different soups in different ratios...

The ramen look good it has ramen noodles, toppings are spot on, broth is good but it has two things missing that are crucial to ramen tare and seasoning oil. You can't just dump miso paste into broth that's why you make tare separately for your ramen, you also made dashi broth which is good but don't put kombu in hot boiling water it needs to simmer gently so it won't get sticky, and seasoning oil is the only thing you forgot put sesame oil or homemade seasoning oil like scallions or garlic next time. Still pretty good ramen.
A few corrections: what do you mean seasoning oil? It is aroma oil you missed 2 things too, Pork ribs beef bone marrow and the fact the ramen noodles are just dry, real ramen noodles are homemade.

I actually saw this video, so I decided to try it by coping how he made it. Turns out Naruto and I really have amazing taste. I was able to try it and it was delicious! Amazing Idea, Guga Foods!
He boiled the stock for 6hrs. Are you going to sit down for that long and wait to be served? The ramen noodles also takes time, as do many of the other ingredients. They have to prepare for a days trade in advance.
@@shark471 he boiled it for like 14 hours I'm pretty sure... 4 hours twice and 6 hours at the end.. that's almost a day on the stove. In a commercial setting you'd probably make 10s of gallons of this at a time.

Actually char siu is a Cantonese word and the word char means fork. Siu means barbecue and when we make char siu, we use a big fork to barbecue the pork. So, guga is actually telling the truth haha

He boiled the stock for 6hrs. Are you going to sit down for that long and wait to be served? The ramen noodles also takes time, as do many of the other ingredients. They have to prepare for a days trade in advance.
@@shark471 he boiled it for like 14 hours I'm pretty sure... 4 hours twice and 6 hours at the end.. that's almost a day on the stove. In a commercial setting you'd probably make 10s of gallons of this at a time.
not jsut that, its impossible to make to order. this food must be prepped about 3 days in advance.

@@ned2938 I eat ramen semi-professionally in Japan and have made quite a few some bowls myself - I would not touch the bowl he made (ok I would try for fun), but man, there is so much wrong with his recipe, it's not even funny
@@NamaJapan Could still taste good. They both ate lots of it so maybe the way it was made was very wrong (I don't know myself, I'm no expert), but the taste might be okay.
@@ned2938 might be, but I doubt it from my experience. The problem is that they can put a video out there, showing all kinds of wrong techniques and explanations and people just believe it, because they think Guga must be an expert. In this case, he just did not do enough research. Unfortunately.

Actually char siu is a Cantonese word and the word char means fork. Siu means barbecue and when we make char siu, we use a big fork to barbecue the pork. So, guga is actually telling the truth haha
