    There are so so many ways to make this process less of a mess. I'm an old baker. And an old RN. I used to make 8 loaves at a time at home. 50-100lbs of flour batch at a time when I worked as a baker. 😳. Suggest math to multiple to big batch. Use a large food safe tub with a lid to mix everything. A "food service bus tub" works well. Instead of a stretch and fold with large mass of dough...a simple lift and fold works with wet hands. Then in 12-16 hours cut hunks of dough and weigh. Shape. Put in bannetons. Insert bannetons into Large bread bags. Loosely secure. Instant humidity. Proceed with retardation in the frig. You will cut your time well in half to 1/4. No more individual bowls to mix and wash. Bakers math and weighing will solve big batch baking time management.

    Jamerill I've seen other bread baker's use clear shower caps for their bread bowls instead of plastic wrap. And you can reuse them. Love your videos

      I use shower caps but my fav is to use large commercial bread bags cause I generally find 24-36 hr retardation method does better putting the bannetons in the bags as far as the crust.

Seems to me that only God can bring us through a storm. Like the bird fast asleep in the crevice of a rock, while storms rage around it! That is peace beyond all understanding. Jamerrill, you continue to rest in that peace, protected by our heavenly father. You are not alone. You are safe, and you are strong because you are a child of God!     OMG, the amount of baking you do is incredible. I am so impressed. The only piece of equipment I can see that you need is a bakers rack on wheels so you can put all those sheet pans on them stacked up and rising. LOL

      Yes! Her beginner sourdough recipe was my very first successful loaf after several other recipe attempts. I recommend it to any sourdough newbie.

    Oh my gosh girlfriend I needed this so bad today. Yesterday I had to put down a very much beloved kitty that I've had for 18 years and I am devastated and heartbroken. This is a nice sliver of sunshine that I really needed.💜🌵

    Bread is more forgiving than somethings. My grandmother taught me by measuring with my hand no measuring cups. When she made cakes she used a tea cup to measure with and I still have it.

    I make Lisa's Farmhouse on the Boone sour dough as well. I use metal bowls lined with parchment. I don't pull and fold every 1/2 hour only when I think about it or something not at all. It still turns out fantastic. I use a potato water sour dough starter and it turns way better, it lasts longer in between feeds in the fridge. Just like my grandpa made on the sheep herder trails.     So happy to see you getting your spunk back, you look beautiful!
    You should try making this bread process easier, Kitchenaid mixers can handle a double batch of bagels.
    Or get yourself a Bosch which could do a triple batch!
    Reduce the time it takes and less dishes!
    Look at Lisa's bread machine recipe, you could mix 2 batches at a time in your machines. If you don't want to bake it in the machines form it into loaves. If you bake in the machine, remove the paddle after kneading, before the rise. It's great if you have a slicer for sandwich bread.

    an easy way to shape the bagels is to roll the dough into a rope then cut off a length. Connect the two ends of cut off dough and you have an automatic circle with a hole. Place sesame seeds or poppy seeds in a dish, boil the bagel dough in boiling water with a touch of honey and then dip them upside down in the plate of seeds before baking. Happy baking 😃

    Believe it or not , weighing you’re ingredients goes faster than measuring. I’ve been doing this for years. Not to mention it saves cleanup as you dirty less dishes. Accuracy is a great bonus too.

      I agree. I just started weighing this year. One saucer put on the scale and a spoon for scooping. So much faster than measuring it all out.

    I keep the banneton baskets with the muslin liners in them, I liberally dust with flour so when I turn it out onto parchment I can lift easily into a cast iron Dutch oven. You then take out the liner, shake out extra flour from both, brush out excess. I never wash them nor have they looked like they are dirty. You could store the liners in the freezer if you are worried.

    Jamerrill, you don't have to discard starter. Especially considering you bulk sourdough and could use a lot of starter. If you weigh out your hungry starter, feed it equal weights water and flour and you'll end up with a whole lot of starter for all of your bulking needs. ❤

    I’m amazed at 12 loaves at a time..I feel like a boss when I do two! One thing to keep in mind, which I learned the hard way. Try to wipe out and toss the dough remnants in the trash . I give mine to my chickens. The dough can really wreak havoc on your plumbing because it basically turns to concrete 🥴 If it does get washed down, run copious amounts of hot water to flush it through..this keeps it from hardening inside the pipes. Great to see you in such good spirits. God bless

    Also totally cool if you like those ridges but the fabric that comes with the banneton is meant to go inside the banneton not over the bread like a cover. Use rice startch/tapioca flour to stop sticking

    Jamerrill I’m So happy for this marathon cooking video! I am a baker/pastry chef by training and I find it EASIER to weigh ingredients. You can just line up the bowls and zero it out and start each bowl individually (I usually make about 4 at a time. I like to use beeswax reusable wraps for my bread making and it works fabulous for me. Rice flour is my favorite flour for coating my bannetons - absolutely zero sticking of the dough.

    My bread addict heart thanks you for this video! I've learned this yr to make white loaf bread(hoping to learn sourdough this yr) and it is so therapeutic to knead the dough, watch it rise, and bake it knowing I made this loaf of delicious bread myself! I truly enjoyed this video!

    I learned to make sourdough from a woman who was a French pastry chef and the best two things she taught me for gluten and gas development were to start with 90% of your water in the bowl add the starter and dissolve them together - this makes sure it is spread evenly and is ready to work! Add your flour and let sit for an hour. At your first stretch and fold add the remaining 10% of water and your salt. Adding salt too soon will hinder gas and gluten production

    Jamerlle, great job with the sourdough! The covers you are covering the Banneton baskets with are suppose to line the basket, flour the cloth to keep the dough from sticking to the cloth. Cover the dough in the basket with something else.

    I have 3 jars of sourdough going,I make bread,bagels,pancakes and English muffins.....so yummmmmy
