I just tried this out today with dough that I had sitting in the fridge for about 3 days. They are DELICIOUS and it feels so much easier to make them this way than with a dedicated bagel recipe. Thank you!
I didn’t know you could leave dough in the fridge! All the recipes I read say like bake within 12-16 hours etc, would it be different if I knew I wanted to use my 2nd loaf for bagels and leave it in the fridge a extra day?
@@kimreed5160 putting dough in the fridge slows the proofing way down so you can easily leave it for a while extra. The two times I’ve made bagels from my sourdough bread dough it has been with dough that was in the fridge for days. It worked better with the 3 day old dough than one that was older so there’s definitely a limit before the dough gets overproofed and too sticky to really work with.
@lymiemama if my dough has been in fridge for about 20 hours (messed up my timing), do I still need to let dough rise on counter as recipe originally calls for? Or do you have to alter recipe to account for the fridge ferment? Recipe called for overnight counter rise but I accidentally misread it for fridge ferment

I've made these twice now and they are so delicious and so easy! May be my favorite sourdough recipe ever- adding them to my regular baking schedule! I do have trouble with them sticking to my parchment paper after I bake them- I've had to cut the bottoms off. Do you have any tips for this?
These were mostly like a peice of sourdough bread in bagel form. Still good but not quite like a bagel. Will probably make a again due to how easy it is just to have one recipe.

Will try this! The bagel recipe I use make dense (but delicious) bagels, yours look a lot softer.
Bagels are supposed to be dense and chewy. These are not bagels in this vid. It's more like a bun shaped like a bagel.

At what point do you shape the bagels? I usually shape after BF, put in banneton and cold proof overnight.
