The fried egg and parsley combination is something I've never seen before and it makes perfect sense. I'm going to try this the next time I make beans. Which is going to be soon.
I don't generally buy canned pinto beans, but I will start soaking some dry beans tonight so that I can make this tomorrow. As always, thank you so much for these recipes. I particularly enjoy the bean and chickpea recipes.
I had to order some saffron from amazon since it's truly impossible to get it where I live in Canada ( without winding up an arm and a leg lighter that is lol ) I'm excited for it to get here so I can make this!!! thank you for all your great traditional spanish food ideas ❤️

@@richardwallace6313 I buy the dried pinto beans, but yes, I’ve grown them and canned them myself. Those are the only canned ones I like. I grew up canning, and my dad and mom had a 2 acre garden. We always had several rows of pinto beans and I grew up shelling, canning, or freezing them. We also allowed a row or so to dry out on the vine at the end of the productive season for the plants and shelled them, spread them on screens, and let them finish drying in the sun. Then we’d put them in large co tainted to use all year long. I don’t like commercially canned pinto beans; they seem to hold on to the flavor of the can.

I made this except instead of the egg, I made a picada using bread and parsley (trying out some vegan cooking skills) - it was still insanely good. The flavors come together beautifully, especially with that saffron and the bay leaves. Spanish cooking is quickly rising to the top for me.
The YELLOW mortar again!!!!! I swear, if I ever manage to get to Spain, I'm gonna liberate it from your kitchen. Gonna try this for the weekend; the fried egg and parsley is monster.

I never expected a fried egg. It looks interesting. When we move out of our apartment and into our house (with a functional kitchen), I will try this recipe. Thank you. (I bet the egg/parsley would add a kick to dip made with frijoles refritos...shh, don't tell my husband.)
Would celery be good in addition with the carrots? I love pinto beans :-) I'm going to make this dish for a hearty brunch. This would be good over a small bed of rice or wilted massaged kale or even collards greens. Yum!
@@SpainonaFork I just made the dish, It turned out well. It was delicious, I actually used kohlrabi leaves instead of kale and I added pearl onions and topped that on rice.
Instead of frying the egg, how about a hard boiled egg? My thinking is, it wouldn’t have all of the grisly parts of the fried egg 🤷🏻♂️. As always, thank you.
I just want to add that this isnt Mexican Salvadorian Peruvian etc, this is SPANISH, SPAIN, recipe. A MEXICAN AND THE REST OF US are not spanish we dont eat it like this.

I always simmer my pinto beans all day long. I can’t stand the texture of canned beans - well - unless they are the ones I can myself! LOL
you don't buy the ones you slow cook? you must grow your own then. I have never tried growing pinto beans before.

@@vickiibendit943 that is best, but if you forget, you can soak them a few hours anyway; you can use a pressure cooker, too, but we rarely do
