I've just recently become a huge Kohlrabi fan. they seem to work in a far wider range of dishes than even potatoes. they even make a great snack just thin sliced as chips, raw. very crunchy and sweet. kind of like a brocolli crossed with a honeydew melon. so great as a snack, great in salads, great stir fried, great fried like hash browns. a very surprising veggie.
When I was young we lived next to my grandparents. In between our houses was my grandparent’s huge garden. My grandpa grew Kohlrabi just for my brother and I. I LOVE IT, it’s a comfort food for me. I now live in Alaska and we very rarely get them here in the grocery stores and they are very expensive but when they have them in stock I normally buy most or all of them depending on how they look. I will definitely try this recipe when I get them next. Thank you.

Yum! Now if i could just buy organic kohlrabi in my area. It also in grown in purple. There is a sweetness to kohlrabi. More in the turnip family. But the analogy close to broccoli stem sweetness is great of flavor.
Morten, I realise this is a late reply but thought I'd answer anyway if it helps others. You could use bean/chickpea juice from tinned chickpeas. Look up aquafaba. There's sites devoted to it. Disclaimer: I've never done it myself.
chickpea juice is a replacement for whipped egg whiles. It needs to be whipped. If you add to to the batter straight, it might make it very thin. it's a big hassle for a dish like this. it's really ok to just omit the eggs.

Just made these but used rice flour instead of flour, for more texture. Sofa king good. These will be on the table often.

Yes, sometimes kohlrabi has purple skin. You can use any color kohlrabi in this recipe. They are usually all the same color inside.
