    I made royal icing yesterday with aquafaba instead of egg whites and it turned out great! For those who don’t know, aquafaba is the cooking liquid from chickpeas (or the liquid from a can of chickpeas). Vegan, no risk of salmonella, and the white was perfectly white.

      Sally Jenko i’ve used aquafaba for vegan SMBC and vegan macarons. it’s amazing and it whips up exactly like egg whites

    Just a little tip..use a spray bottle with water to thin your icing...just a couple spritzes at a time...it helps to not over water..

      I'd worry about bacteria build up if I had less frequent use of the bottle and believe she generally measures the quantity only because she has more icing and dry ingredients only.

      @@fionafiona1146 you would empty the bottle and clean it before use. I've never had an issue with using the spray bottle method. 😋

      I know but also know, I wouldn't use distilled water, get the lead or spray head completely dry and work in the imperfect reality, making this method only suitable for amounts you can easily measure in centilitres and therefore more conveniently (not that spray bottles aren't convenient for optimising but I currently use a syringe for the amounts I make and believe them much less difficult to clean).

    Excellent information! By the way, the pokey tool is called a "scribe tool" and the technique at 12:51 is called "brushed embroidery".

    I justed wanted to say thank you. I’m visually impaired and seeing details in videos isn’t easy and I truly appreciate how descriptive you when explaining things (such as in this video when you talk about the royal icing should melt back together fairly quickly). Love your stuff, FYI used your buttercream recipe on a cupcake order today it was awesome!! Thank you again.

    Thank you Jemma! My twins are busy decorating your Halloween gingerbread cookies with this royal icing. They have been busy doing the wet on wet technique for almost an hour.     CupcakeJemma, I was smiling when I heard you say," Use your pointy pokey thing" so cute! I believe they call them Scribe Tools. I'm fairly new to decorating cookies so my royal icing consistency needs some work when decorating but practice makes perfect! The first time decorating with my icing it was running all over the sides so of course, I had to eat that cookie...lol I still wanna try wet on wet technique it looks so fun creating the hearts. Thank you so much for sharing it was very helpful!

    Love this masterclass. I’m making heart shaped sugar cookies with the kids tomorrow which they will decorate with royal icing and fondant. These will top your red velvet cupcakes which we’ll also make, for a valentines treat, so this video is literally perfectly timed for us. Great tutorial as always. Thank you. x ☺️

    Thanks for the information. The 'pokey thing' is called a scribe and the embroidery technique is called brush embroidery. Also, adding water to the RI with a spray bottle allows more control than spooning it in. I enjoyed your video.

    I have a 5 year old son that loves to make cookies and he is always begging me to make some with icing decorations. I know it’s time consuming but I might do it one of these days to make him happy. Your technique and explanations are a big help.

    @cupcakejemma your tutorials have made such a difference to my baking. Why don't you have your own book? (not the one with Jamie Oliver). I made Royal icing for the first time today following your instructions and was able to decorate my cookies and cupcakes.
    Please do more tutorials. Your one of the few bakers that I can follow and it actually works
    I also found that the "pokey thing" 😂😂😂 is a fondant tool too. Worked just as good
