I made royal icing yesterday with aquafaba instead of egg whites and it turned out great! For those who don’t know, aquafaba is the cooking liquid from chickpeas (or the liquid from a can of chickpeas). Vegan, no risk of salmonella, and the white was perfectly white.
I'd worry about bacteria build up if I had less frequent use of the bottle and believe she generally measures the quantity only because she has more icing and dry ingredients only.
I know but also know, I wouldn't use distilled water, get the lead or spray head completely dry and work in the imperfect reality, making this method only suitable for amounts you can easily measure in centilitres and therefore more conveniently (not that spray bottles aren't convenient for optimising but I currently use a syringe for the amounts I make and believe them much less difficult to clean).

I'm fairly new to decorating cookies so my royal icing consistency needs some work when decorating but practice makes perfect! The first time decorating with my icing it was running all over the sides so of course, I had to eat that cookie...lol I still wanna try wet on wet technique it looks so fun creating the hearts. That should be a new merch line, the Cupcake Jemma Pointy Pokie Thing 😆. My skill at decorating is usually at 1, maybe 2 on a good day, so these masterclass videos are extremely helpful.
I have a 5 year old son that loves to make cookies and he is always begging me to make some with icing decorations. I know it’s time consuming but I might do it one of these days to make him happy. Your technique and explanations are a big help.

I made Royal icing for the first time today following your instructions and was able to decorate my cookies and cupcakes. Please do more tutorials. Your one of the few bakers that I can follow and it actually works I also found that the "pokey thing" 😂😂😂 is a fondant tool too. Worked just as good

Just a little tip..use a spray bottle with water to thin your icing...just a couple spritzes at a time...it helps to not over water..

@@fionafiona1146 you would empty the bottle and clean it before use. I've never had an issue with using the spray bottle method. 😋
