    Just made this yesterday for the first time, although I have to admit, I gilded the lily with them a bit. I added some pecans to the top of the caramel layer before adding the crumb topping & baking it. After the final product cooled, I drizzled some chocolate ganache on top of that! It was very good, and even my non-keto husband really liked them. (I would have liked to make the Tagalogs, Pecan Turtles, and others, but I just had some surgery & wasn't up to the more complicated recipes. This one worked really well and wasn't hard to do. I am sure I will make it again!)

    the bars were delisious initially, but soon after the crumb started to get soft , moist. I find this is a universal with most Keto baking, especially when using coconut flour, no matter how small the amount mixed with other flours.

      I found the crumb was firmer after refrigerating -- otherwise, it sort of fell apart, fresh out of the baking dish. We didn't mind very much, I must admit, because it tasted so good.

    Ok, I tried them with Pecan flour and they were pretty good, VERY oily. I als burnt my caramel. I only had lakanto baking sweetener with monkfruit, bu i used it in the same ratio as swerve.

      I run 3x a week and I do CrossFit style training 3x a week. So I really do whatever the coach tells me to do. There are usually pull ups or push ups or some sort of arms in every workout.

    Back to review. I was expecting something super delicious and they would have been amazing but for the extreme sweetness. I’d love to try some of your other recipes unless they are all super sweet. I’m gonna guess that these being a caramel treat is the reason for that? I had to give half of them away and they had the exact same opinion. We are both going to freeze them and take out a tiny piece when we have a very, VERY sweet tooth. I’m sure it was me, I messed up this recipe somewhere. Nobody else had this experience which is why I’m sure I added too much sweetener somehow.

    I notice a few differences in the written recipe and the recipe on the video. Is it 6 Tablespoons butter or 1/2 cup?
    I personally am going for the fuller amount believing more is better. Also, with the amount of vanilla I am going for 3/4 teaspoons instead of 1/2. Will any of these differences make a difference in the recipe? Love your recipes and can't wait to get started on this.

      Darn. I think I was supposed to say 6 tablespoons. They will work out either way but if your crumble mixture is too wet, add a bit more almond flour or coconut flour.

      @@AllDayIDreamAboutFood I used 4 Tbs as stated in the video and it looks great. I haven’t dug in yet, it’s cooling on my counter. I do think that 6 T would have made it too wet. As it was I added another t of coconut flour.

    Thanks for sharing. I've tried to make caramel before but it never turns out creamy like that. I still use it on pancakes so as not to waste. Can I use sugar free store bought caramel? If yes, do I need to tweak it at all?
    Update: I made it using Smucker's sundae syrup (sugar free). OMG It was amazing. I would cut the sugar just a bit cause the syrup is pretty sweet. But definitely making this again.

      Hope you enjoy! Just be aware that pecan flour is more coarse and more dry so you may need a bit more butter.

    I'm a relatively new follower, and while driving to work wondered why they use sugar to preserve food?
    Is there an alternative for us on keto?

      You are right, sugar acts as a preservative, making food shelf stable (like jam). I am not sure any keto alternative has the same properties, although allulose might be the closest. But I don't know of any studies on this so can't be sure it will preserve things properly.

      I’m really loving the Splenda Magic Baker which is a blend of erythritol, stevia and allulose. Good sweetness and no cooling sensation.

      Yes, someone else pointed that out too. I think I was supposed to say 6 tablespoons. I have so many recipes, it's surprising I don't make mistakes like this more often!
      They will work out either way but if your crumble mixture is too wet, add a bit more almond flour or coconut flour.

    Looks yummy! Do you find baking these in metal opposed to glass makes them crispier? Would glass cause them to have softer edges? TIA

      This recipe is much better in metal. Glass doesn't conduct heat nearly as well but once it heats up, it holds it's heat. So you risk burning the edges before the center is cooked through.

    I don't understand it; when I make caramel out of erythmitol, the caramel sort of buuuurns in the back of my mouth. Any tips, please? Thank you for sharing and best regards from Denmark

      I use Allulose, and very low heat. However for her caramel sauce she uses a mixture of sweeteners, she did a video, I suggest you watch it- she gives great tips❣

      Pyure makes a blend of stevia and erythritol, and Splenda now makes blends of erythritol with monk fruit and allulose. I find having the second sweetener boosts the flavor without adding to that buzzing mouth feel
