I'm going to do something hypocritical: I made it just like you said BUT I used thighs - what I had. It worked great, and I really appreciate the timing of this tip. I hurt my wrist so I couldn't have cut or pulled chicken by hand, but I could turn on my mixer! You made my day!
Hi jeff, I just received my pressure cooker yesterday and because of your video, I decided to try to make chicken this way today. OMG! It turned out perfectly. I shredded it with my hand mixer and added celery onions pepper ranch dressing and a little bit of Chipotle dressing. I'm going to have high protein meal for days. Thank you so much for this video!

Just got my 8qt duo today. This was my first make in it Next time I'll toss in a couple thighs for a bit of fat. But with a bit of taco sauce, cilantro, lettuce, tomato, and onion, my family loved it. Great recipe Jeff. This can be used for chicken salad as well. After cooking the chicken breast , it takes me forever to shred it by hand, and to think, I've got a kitchen aid mixer. Thanks again for this much needed tip
I love it!! Just a note...I use my Ninja food processor attachment for my blender with the plastic dough blade, and it does an excellent job as well shredding the chicken beautifully. I am gonna throw out and manual meat claws...aah no more hand cramps!!

This simple recipe works perfectly for chicken breast and shows how easy it is to make chick with just some broth and salt/pepper. I like adding a jar of salsa or canned tomatoes sometimes (and I might add 1/2 cup of water or broth to that just in case) and that's it. Shredded chicken for rice, pasta, sandwiches, dips, salads, or plain ol' protein!
I add it inside tortillas with shredded Mexican cheese, roll them up, put them in a casserole dish, flood it with enchilada sauce, and bake! Not “diet” food, but delicious!

And there's some what onions celery spices in there I normally put it in the Crock-Pot and it Cooks between 6 and 8 hours. I'm trying to figure out with that much meat and those different types of meats what would you assume the cook times should be?
Why not put the salt and pepper in the broth and stir before adding? If you put one whole carrot a stick pf celery and half onion in with it, you would add some yummy flavor.

She swears by canned pineapple juice instead of broth and to only cook 7, 8, or 9 minutes (It may be 6,7,8) depending on size of breasts. She swears that it should be a Natural pressure release and that you use the same cook time whether 1 or 8 breasts in the instant pot.
Yes, you can put frozen, raw meat into the instant pot. For frozen chicken, I usually do about 15 minutes. I can probably do 12-13 minutes (and then a couple min of natural release) but I am always paranoid about undercooked chicken despite what the meat thermometer says LOL. I only cook for myself, so I do not make big batches, but if I put 1-1.5 lbs of frozen chicken breasts with a cup of liquid (sometimes I'll do less liquid and add some salsa or random veggies), I would set for 15 minutes. Since they are frozen, it does take a few minutes longer to come to pressure. I did fresh/thawed boneless chicken breasts once for 12 minutes and the internal temperature was almost 200 degrees (sure they were a bit dry, but shredding and keeping them moist was fine). You just have to experiment, but I recommend a thermometer!

I prefer chicken thighs to breasts. They have more flavor and are cheaper anyway.

I would add the salt and pepper to the broth first and stir so it's mixed up when you pour it on your chicken.

The chicken came out perfect. I did 14 mins instead of 12 for safety and it came out perfect!
