Awesome recipe Bharat. Missing the old research oriented Bharat though. Here's a challenge.. to create a truly note worthy veg biryani. The problem with a veg biryani is that the vegetables are too delicate for the flavours to develop like in a mutton biryani. So we end up putting too much masala. How about first slow cooking the gravy for half an hour, then adding the veggies, partially cooking them, finishing off with partially cooked rice on top. This will give the authentic taste of a slow cooked biryani
