Yayyyy~~Girl in Calico, one of my favorite YT'ers! I love her videos. Here's a winter squash recipe for you~~I use butternut squash, but any of the flavorful, hearty winter varieties will do: Roast a squash (you can jab a couple of holes in the seedy part with a knife, place on a cookie sheet, and roast in the oven at 400 until the "innards" are soft~~OR~~be really homesteady like me and poke a couple of holes in the seedy end, wrap in foil, and toss in the hot coals of your wood stove until soft.). Cool so that you can touch, then remove the "innards" and place in a bowl. To this, add a bit of mayo (homemade would be great), some diced onion or onion powder (I like the powder best for this dish), a dash of smoked paprika, a dash of cayenne if you like heat, a bit of salt, a little honey, and~~if you have it fresh (not dried~~blargh!), some chopped cilantro. Mix to incorporate and serve hot or cold as a salad/side. YUM! You can also use sweet potatoes for this instead of squash.
