    These are mantis shrimps. Pretty common in Asia. Its really good. Try it if you have the opportunity. The flesh is something in between crab and shrimp.

    Mantis shrimp! They can use their front limbs to crack open some of the hardest things on Earth!!! Some have even broken people's fingers!!! Some can also extend their front limbs even further to reveal dagger like claws to slice flesh!!! They are very territorial and don't even tolerate each other unless mating!!!

      @@flighttherapybullisticfpv133 there are more than one kind of mantis shrimp, ones with claws and ones with the boxing gloves. These are indeed mantis shrimp. The ones with the clubs are problematic as pets because they punch the aquarium glass and break it, lol. So good luck to the original commenter .

      Crustaceans, similar to lobsters. I bet they are delicious. They are a weird looking critter tho. Interesting way of catching them. Street food in oriental countries is unique. I was a big fan of squid tempura when I was stationed in Okinawa. The venders got a big laugh as I gobbled down a bag of them in front of them. I offered my hand to shake to my favorite vender and told her "Domo arigato". She smiled and was sincerely grateful at my gesture. That must have been a story to tell her family at dinner time. If I remember, a bag of tempura might have cost 2 bucks. A decent amount for the effort cooking it. I could never make it like that when I lived in Seattle -- it was as chewy as a chunk of rubber. I gave up trying to make it again and wished I had misses Higa's tempura.

    Questions: 1) why on earth were they individually put in plastic bottles? What was the point of that? 2) why do they not remove the shell when they stir fry them? Coating the inedible shell with sauce or seasoning seems counterproductive to me.

    Looks delicious...except, what is the red jelly-like stuff? Mantis Shrimp roe, maybe...
    Sorry live far from the ocean, where we are limited to whatever they freeze and package...usually, small or Jumbo Shrimp, Lobster Tails...a few types of ocean fish...ocean perch, salmon and sometimes halibut if you're lucky.
    One day, I would like to drive to the coast and spend a few weeks sampling all the restaurants, up and down the coast...if there are any left, after the ridiculous shutdown of small businesses.

    OK, I understand why the mantis shrimp are housed in individual bottles. They're highly aggressive and territorial, and not above beating each other to a pulp at the drop of a hat... anyone's hat. What does puzzle me is how the shrimp are got into the bottles, as they mostly seem too big to go in through the obvious way. All I can think of is that the bottles are split along the side somewhere just long enough to get them in, a temporary gap that closes up sufficiently to keep them inside for as long as needed. It has to be that way because, given how vigorously they explore their prisons, seeking a way out, the tank would be full of loose mantis shrimp otherwise!
    And whilst I do understand the need to remove the raptorial ends of the arms before killing the creature, I do have serious reservations about removing the intestinal tract whilst the poor creature is still very much alive. They might only be crustaceans, but they can still feel pain, and for a group of people renowned for their empathy and compassion, when if comes to seafood they seem to be remarkably callous and cruel!

    For the life of me, I can never understand how shrimp are cooked. All of the seasoning goes on the outside of the shell, which you remove and throw away??? Seems like a defeated purpose.

      They are dropped into the bottle when they are very young and little. They spend their entire lives in that bottle till they are eaten.

      Manado mas. Di restoran seafood yang agak mahalan, biasanya sering nyediain udang ini. Agak mahal emang, saya aja sering mikir 2 kali buat beli karena harganya. Biasanya yang sering beli turis china yang tiap hari selalu datang ke Manado.

    The chef cutting the front leg is because it is "dangerous". The mantis shrimp can fire a punch to crack human finger nail in lightning speed. Btw it is tasty nevertheless
