I gave up trying to make it again and wished I had misses Higa's tempura.

Questions: 1) why on earth were they individually put in plastic bottles? What was the point of that? 2) why do they not remove the shell when they stir fry them? Coating the inedible shell with sauce or seasoning seems counterproductive to me.

Sorry live far from the ocean, where we are limited to whatever they freeze and package...usually, small or Jumbo Shrimp, Lobster Tails...a few types of ocean fish...ocean perch, salmon and sometimes halibut if you're lucky. One day, I would like to drive to the coast and spend a few weeks sampling all the restaurants, up and down the coast...if there are any left, after the ridiculous shutdown of small businesses.

OK, I understand why the mantis shrimp are housed in individual bottles. They're highly aggressive and territorial, and not above beating each other to a pulp at the drop of a hat... anyone's hat. What does puzzle me is how the shrimp are got into the bottles, as they mostly seem too big to go in through the obvious way. All I can think of is that the bottles are split along the side somewhere just long enough to get them in, a temporary gap that closes up sufficiently to keep them inside for as long as needed. It has to be that way because, given how vigorously they explore their prisons, seeking a way out, the tank would be full of loose mantis shrimp otherwise! And whilst I do understand the need to remove the raptorial ends of the arms before killing the creature, I do have serious reservations about removing the intestinal tract whilst the poor creature is still very much alive. They might only be crustaceans, but they can still feel pain, and for a group of people renowned for their empathy and compassion, when if comes to seafood they seem to be remarkably callous and cruel!
For the life of me, I can never understand how shrimp are cooked. All of the seasoning goes on the outside of the shell, which you remove and throw away??? Seems like a defeated purpose.
