Ingredients:
1 whole Chicken (separate chicken parts and carcass)
200g pack Chicken feet
1 stalk Leak
1 Onion
4 cloves Garlic
1 Carrot
2 stalks Celery
2 tbsp Shaoxing Wine
3 liters Water
2 tbsp Light soy sauce
1 tsp salt (to taste)
150g Shimeji mushrooms
6 pieces Dried mushrooms (rehydrated)
400g Cooked rice
100g Overnight rice
2 Eggs
2 tbsp Cooking oil
Cooking oil for deep frying
Salt
Chopped scallions
Coriander
