- Let's go back in time to learn how to make this prehispanic mole in a very traditional way. We'll use a metate (precolombian grinding stone) to mill the ingredients without damaging the flavors of each ingredient. Today we cook with a true legend of Zapotecan cuisine, Abigail Mendoza Ruiz, one of the most respected culinary instructors in all Mexico.
It's a blessing to have a Mexican mother. Her food was made with love.
Its nice seeing all the respect and honor you show to others in your videos.
Thank you, Martin!

I miss my mothers cooking. My mother is from michoacan, Mexico. She made the green mole with tortillas. Oh my it was heaven sent. My mom passed away in November 2010. I miss her and her homemade cooking. I still love her.

What a beautiful lady! The metate is a workout, for sure. My abuelita used one to grind corn for tortillas. I'm so happy Abigail is keeping the old traditions alive. Love your channel and really look forward to more new videos. Great job.
Thanks! is amazing that some people still keep these traditions! I really love the flavor when a dish is made totally by hand
I had originally thought it was a tie between Puebla and Oaxaca for the finest food of all Mexico, but after seeing Abigail here make her Prehispanic Mole, Oaxacan food is Number One! Thanks for sharing Big Smiles😃, 👍and greetings 👋from Querétaro. 🤠

Loved this! We did one of our cooking classes in Teotitlan and got to use the metate to grind chilies. It's hard work.
yes it is! What did you learn to cook?
Vives en Oaxaca? Podría recomendarte los mejores lugares y sabores. Buen video, saludos.
I think this stuff looks delicious. I tried it once though and I wasn’t crazy about it. I guess it could’ve been the cook. But it was weird because it definitely looked amazing. I might have to give this another try sometime.
New to your channel and I love it!!!
Thanks, Celeste! What do you think about my new episodes about Thailand? How do they compare to the episode about Mexico?

Such a lovely woman!

I loved this video
Their civilization might have fallen, but their traditions and cultures will keep on living!
ésto es tradición y cultura gastronómica
Beautiful soul...
VIVA MÉXICO QUE NO SE ROVEN KA CULTURA MEXICA COMPA
That's the same beautiful lady that was on Pati's Mexican table "Amarillo de mole"! Pre-hispanic, Zapotecan food is the BestI even like how they make their tamales is just like how you do tortillas but you feel it with the mole, boiled chicken and you could put vegetables but on pati's Mexican table she didn't put any vegetables in the inside
Oaxaca ❤🇲🇽
I can use The Metate, till today I use it to grind corn and hand made tortillas.
Viva México, nice video and nice lady
Love Natives foods and cultures 😘👍
We miss you
Looks like curry 😍
❤
That's the same beautiful lady that was on Pati's Mexican table
Those arms on Abigail! I bet you she can throw some hands with some force

Let's see, a test, what cooking methods were used and why?
That's her idea, in Mexico every house only had one single Metate, no one had over six of them.
5:35 I'm Mexican and wouldn't be surprised if corn still makes up 80% of our diet
Where u at bro we need more videos of you
Looks great! So what is the actual name of the chicken with prehispanic mole dish?
There are many kinds of mole, Poblano, Oaxaqueño, Green, etc. The preparation of this one is simpler but also delicious. Watch this episode to learn about other kind of mole ua-cam.com/video/TrdIwdOEs3M/v-deo.html
Regards!
I don't agree...because my best food in diversity and flavors is Italian and Spanish..The Mexican has the Spanish influence like all of South America...
@@briannaysiamodonnell478 It's pretty obvious that you haven't had and tried so much mexican cuisine. Also, Mexico doesn't have anything to do with South America...
Mmm
😊😊😊
😍👍
Watching Abigail on pati cooking show on tastemade channel in Philadelphia and I’m looking her up her voice is sexy and I love ❤️ the Spanish accent but I’ll love to learn how to cook 👩🍳 something with her great job great personality I feel it thru the camera 🎥 I’ve had to look her up it’s crazy
What happened with the tomato’s?
Would this be chilmolli or tlaolmolli? Maybe tlaolchilmolli?👀
Holy crap check out the guns on that woman!! Clearly the metate does NOT screw around. Those women must have been FIERCE! 👊♀️
Can I has?!?!?
This momo was eating the sauce with a fork and pretending to chew! Haha q mamon
Original mole didnt have chicken in it maybe Turkey? The Spaniards brought the chicken and a list if other animals/foods from Spain.
whiteness it's so cool to discover
I hate to say this but chickens are not Native to America...hence not Pre Hispanic.
