If you cut the meaty back portion away from the thigh end, you can get an additional 2 meals out of the leg quarters. Boil them for chicken and rice or dumplings. Boil and de-bone for a chicken pot pie. So easy on the budget.

I wish Walmart in Canada had those bags of leg quarters. Can someone else in Canada tell me if we have them here and I just haven’t been able to find them? I know they won’t be as inexpensive as they are in the US but it would be great for meal planning. I almost never cook my rice in whatever dish I’m making. I have two exceptions which are very specific casseroles, but other than that I prefer to have my rice, and then put whatever I made on top of it.and I like extra sauce. 😁

You could add some black beans and corn and a bit more seasoning to the shepherd's pie to stretch it more. Black beans would be good in the salsa chicken also.

That is what i grew up calling shephards pie. Didnt realize it wasnt the normal one until i was an adult. Also great with biscuits or corn bread on top instead of mashed potatoes
Hi Mandy. For that salsa chicken, I would remove and debone the chicken and shred the meat first, then add it back to the pot with the rice and cook until the rice is done. That way, the rice can really absorb all those flavors. Your southwestern shepherd's pie looks great. That reminds me so much of tamale pie except it has a cornmeal masa topping instead. To further stretch that budget, I would only use half the cheese, skipping the layer beneath the potatoes leaving more cheese available for another dish later. If you use a sharp or extra sharp cheddar it yields more flavor, and you can get by using less cheese. I would also cut the meat down to a half pound and add in some chili beans or refried beans. Everything you've made looks tasty. Your family is blessed to have a good home cooked meals like these for dinner. Happy New Year!
That shephards pie looks really good. I feel like a can of black beans and some corn might stretch it for additional servings. Also, I feel like it would be good with lentils in place of the ground beef. Thank you for doing these videos. Really helps with ideas to stretch the budget.

The chicken skin when crisped up and mixed with old bread ends and seatings makes an awesome flavourful topping when your in a budget

Rice takes much less time. Cooking the rice in the drippings/water. Add more water of course.

Yes you can! Just defrost and squeeze as much of the liquid out of the spinach as possible!
I just found these videos, I make veggie beef soup a lot. I've found Walmart's canned mixed veggies are cheaper and you get more than the frozen.
