Tasty Buckwheat Hemp Bread | Gluten-Free Vegan Recipe

  • This Buckwheat Hemp Bread is SO tasty! It’s the kind of loaf you want to bake if you can’t consume gluten-filled goods. The bread recipe is vegan, allergen-friendly and impressive even for your family members that don’t have food allergies! Ps. If you bake the recipe, keep the end piece for yourself-it’s the best slice!
    Tools: Large mixing bowl, kitchen scale or measuring cups/spoons, spoon/soft spatula, bread pan (3.5x7.5x2.5(h) inches), unbleached parchment paper, wire rack
    INGREDIENTS:
    2 teaspoons active yeast (10g)
    2 tablespoons whole psyllium husk (14g)
    1 cup warm water (240g)*
    1 cup buckwheat flour (120-130g)**
    1/2 cup white rice flour (70g)
    1/2 cup brown rice flour (70g)
    1/2 cup tapioca flour/starch (60g)***
    1/2 cup potato starch (70g)
    1/2 cup seed (or nut flour) (50-60g)****
    1/2 tablespoon fine grey sea salt (8g)
    1 tablespoon organic coconut palm sugar (or maple syrup) (10g)
    1-1/4 cup homemade hemp milk (300g)*****

    Delicious! I love the shorter rise times than the sourdough, although those are good too. But when short on time and I want something tasty, this is a WIN! Thank you Chantal for your clear and easy directions that are gf and don’t contain gums :)))

    Hi! I’d like to ask since I don’t have psyllium husk in hand can omit to xanthan gum instead ? Cheers!

      I've never tried so I can't say what amount would be a right. You can use flaxseed meal with a little xanthan gum maybe but again, I've never tried.

    How can I make this recipe with sourdough instead of yeast?

      Hi! In many of my recipes, adding 1/2 cup to 1 cup of GF starter instead of the active dry commercial yeast could totally work. You might have to decrease the liquids by a little and let the dough rise/ferment for a little longer, but it's possible for sure! Let me know if you do try it!       That's a great question. I feel that the dough might be a little too soft (wet) to hold up as a free-form loaf. If this is something you would like to try, consider increasing the whole psyllium husk. Right now the recipe calls for 14g but you could add as much as 20g which is about 4 tablespoons. Another tip would be to reduce the liquids to a little less if you don't increase the psyllium husk. Once your dough is ready to bake, you could also stretch and fold it a few times (gentle knead) with a little brown rice flour to help shape it into a boule. If you need more tips, let me know. If you do try it! Please let us know how it goes! You make me want to try it, as I really love this recipe but I've never thought about baking as a free-form ;)

      If you right click anywhere on the page, not the video, and select the "translate to" button you can choose which language from the drop down menu. Not 100% perfect but its doable for most things. Hopefully this helps. Btw, I use Chrome browser.
