How to Make Pork/Chicken Adobo | An Island Comfort Food

  • Pork/Chicken adobo is a scrumptious and hearty dish to eat on days when you want to relax with the ohana. Adobo was brought to Hawaii from the Philippines and has been part of Hawaii’s wide variety of local meals. It is now considered to be a comfort food and a simple dish to make. Adobo is a very versatile dish. It could either be chicken or pork. Growing up, I always had it as pork with potatoes as a filler. #adobo #chicken #pork
    Ingredients:
    1.5 lbs chicken thighs, pork butt/shoulder, or pork belly
    ½ cup distilled white vinegar
    ¼ cup shoyu (soy sauce)
    3 cloves crushed garlic
    ¼ tsp salt
    ¼ tsp peppercorns
    2 bay leaves
    ½ cup water
    2 russet potatoes
    ½ tbsp cornstarch
    1 tbsp water

    I have never made adobo before but I used this recipe and instead of simmering on the stove I finished it off in the crock pot on high for 2 hours and low for 2 hours. It came out very good. I used pork belly. The only thing was in the end there was a high oil content from the pork belly .... made the rice taste good! Mahalo for this video!

    Green papaya is good substitute for potatoes. Very tasty.

    I make my pork adobo a bit different, I like to boil the pork with all of the ingredients and let the water evaporate, the pork turns out tender and absorbs the flavor of the seasonings.
