I made this a couple of weeks ago with a few variations: ground turkey instead of sausage, cooked wild rice, and folding the cooked squash that I scooped out back into the stuffing. Also had diced apples and dried cranberries, and the fresh herbs. It's also nice with a bit of grated Parm or gouda on top before it goes under the broiler.

I made this tonight and it was absolutely divine! I also used the scooped out soft butternut squash to make muffins (the ones that need pumpkin puree) so didn't waste anything! 😊 Will definitely make this again - probably sooner than later 🤣
My grandmother used to make a butternut squash casserole...it was awesome. One of my favorite seasonal dishes is Gumbo, I never make it until the temp drops to around the mid 50's, that and a great Texas chili are my two go to faves!!!!

I used your recipe for inspiration but substituted farmers markets finds using acorn squash and Irish cheddar cheese. I seasoned with garam marsala to hit those earthy notes in addition to sage but omitted the rosemary. Love taking a great idea and using what is in the kitchen. It hit the spot!!

Yes! I actually have a tip written in the post where you can spread a layer of the mashed squash in a casserole dish, then top it with the apple sausage filling. Hope that helps!

Can you substitute the sausage to plain ground meat (beef, pork, chicken or turkey) or do you really need the flavour of the sausage?
Yes, you can use plain ground meat! I would make sure to season it though so it has enough flavor.

I'm not a fan of pecans so I'd replace them with pepitas (pumpkin seeds) or walnuts. I'd also add some parmesan on top before broiling.
