Hey Aaron, great video and awesome idea. I did this same thing the end of summer last year, although mine was just rubbed and roasted low and slow in the oven with out the ten hour hold it did come out incredibly well and gave me the BBQ fix I needed.

Chuck is more expensive per lb than brisket
So not really poor mans anymore

The point is that a 4 lbs chuck is going to be less expensive than a 15 lbs brisket
