I can say Laksa literally changed my life. It was my first love since Singapore and Malaysia, where I made my first steps ever in Asia and it jumped my interest in foreign food. Laksa is why I started cooking.
My family is from Montreal, and the ultimate cold weather soup for us has always been French onion soup. The trick is using really good quality crusty bread, really good cheese, and red wine in the broth.

There are lots of coconut based laksa in whole Malaysia. Sarawak laksa, Johor laksa, Northern Region of Malaysia have "laksa kuah lemak", Terengganu/East Coast "Laksam"

In my country, lemongrass is sold in little glass jar with a single stem per jar. Really expensive and then you have to get rid of a lot of it because it is to hard to use. Galangal, dashi stock and coconut milk not in cans are also unobtainable.

In Malaysia we got many type of laksa. each recipe different from each state Laksa kedah - rice noodle with fish lime broth laksa penang - got two version theres one similar to kedah and another one is yellow mee with curry Laksa Perak - spaghetti with a seafood broth (squid, prawn, crab and any seafood you can find) Laksa Melaka - or some call it laksa nyonya. similar with the laksa u make just usually they put more coconut milk and prawn. Laksa Johor - Spaghetti with a fish sour broth with coconut milk Laksam Kelantan - homemade rice noodle with a creamy coconut milk thick fish broth Laksa Serawak - shrimp paste soup with bee hoon(thin rice noodle)

Coriander being either classified as delicious or soapy is based on one gene in humans. There is a study about this which came out recently. This means there is almost no in between wether people like it or not.
Ya my mother can't stand it and tastes soap. I can definitely see how the taste is vaguely soapy, but I still enjoy it in a lot of dishes. It can be overdone pretty easily though, which for me can ruin the meal.
That looks so good! One of my favourite parts of most Laksa I've had is when they mix rice noodles AND thicker ramen type noodles. Adds a great texture!
I always found that the leaves have almost no flavour when compared to the stems (maybe 30% of the flavour}, so to me leaves are just basically for garnish.

It actually depends on the genetics! Thought it’s simply a matter of taste but the soapy taste is genetically predisposed. I for example love coriander and could eat it with highkey everything but it doesn’t taste soapy to me at all

usually if its a bit older and less fresh, or in larger quantities does it annoy me, but more often than not it's bright, fresh and herbal instead of soapy, astringent and metallic.
@@forgottenfries it's not a real flavour, i believe it's the "flavor" of food sensitivity/allergy. Hot chili peppers have capsaicin which is a general skin irritant, but that irritation is also interpreted as a flavor in food.
@@forgottenfries Some people are genetically more sensitive to the aldehydes in cilantro, which literally tastes like dishwasher soap. Imagine putting a spoonful of Dreft in your mouth. Me and some of my relatives have this gene so I try to avoid cilantro in my food whenever I can since it's ruins the whole dish.

I have made this 3 times since you posted the video - 3 batches, so around 18 portions. It has absolutely taken the 1st spot from ramen for me, when it comes to soups with noodles (probably because it takes like one quarter of effort to make it, heh). I have tried many variations when it comes to toppings and everything just kinda works because the soup is so fantastic! Thank you so much for this recipe!
yes, lemongrass, also kaffir lime leaves and thai chili freezes really well. i always have them in the freezer and they keep for very long time. happy SE Asian cooking!
if it's fresh and in reasonable quantity, then yes. But every now and then i find it to be offputting and overwhelming. sometimes one sprig can taint a dish too much, but I'll still eat it. I'm not allergic to the degree that one leaf can ruin a dish.
I think the issue is that it has a very strong and characteristic smell. In large quantities, this can be overwhelming and therefore seem "soapy". That being said, it can also be true for many spices like anis, lemongrass and ginger. Those who complain about it are mostly people who generally don't like their spices and have easily overwhelmed taste nerves. I'm not one of them, so just give me the cilantro!

Love your rempah! May I suggest using oil instead of water to loosen it up, adding a touch of sugar to balance it out, and frying the paste longer until it's dark red and the oil has clearly separated out 🙂
Maybe try laksa leaf if you can find it, its supposed to not trigger the sensation at least for some people who find cilantro tastes like soap, though funnily enough as someone who doesnt find cilantro tastes like soap... It tastes kinda like soap, its like cilantro but id say more lemony and slightly less bright
It really made me think of Kah Soi, also a coconut based soup in the North of Thailand. The special garnish there is pickled green cabbage and some fried wheat noodles for texture.

the broth should be also a good one, but the worst mistake is actually burned bitter onions - if they are fine, you cant actually ruin this soup :)

I don't know if it makes a difference, but my mum always adds oil instead of water into her rempah. Then you could use less oil when frying the paste.

It's a genetic issue. I suffered my 2 week work stay in Colombia because every food smelled and tasted like soap, so I had to look it up.
Cilantro doesn’t smell like soap. You’re Soap probably smells likes cilantro.

Cilantro is tasty when freshly served but tastes like soap when it's reheated

that's interesting, i never noticed that about reheating, for me it's when it gets old and isn't fresh anymore, or if it's too much.

yes, lemongrass, also kaffir lime leaves and thai chili freezes really well. i always have them in the freezer and they keep for very long time. happy SE Asian cooking!

if it's fresh and in reasonable quantity, then yes. But every now and then i find it to be offputting and overwhelming. sometimes one sprig can taint a dish too much, but I'll still eat it. I'm not allergic to the degree that one leaf can ruin a dish.
I think the issue is that it has a very strong and characteristic smell. In large quantities, this can be overwhelming and therefore seem "soapy". That being said, it can also be true for many spices like anis, lemongrass and ginger. Those who complain about it are mostly people who generally don't like their spices and have easily overwhelmed taste nerves.
I'm not one of them, so just give me the cilantro!

Hm. Komme selbst aus dem Norden. Menge und Vielfalt des Fischangebots an den deutschen Küsten sind doch wirklich ziemlich bescheiden, wenn man das mit anderen Küstenregionen auf der Welt vergleicht.
Love your rempah! May I suggest using oil instead of water to loosen it up, adding a touch of sugar to balance it out, and frying the paste longer until it's dark red and the oil has clearly separated out 🙂

Maybe try laksa leaf if you can find it, its supposed to not trigger the sensation at least for some people who find cilantro tastes like soap, though funnily enough as someone who doesnt find cilantro tastes like soap... It tastes kinda like soap, its like cilantro but id say more lemony and slightly less bright

It really made me think of Kah Soi, also a coconut based soup in the North of Thailand. The special garnish there is pickled green cabbage and some fried wheat noodles for texture.

I've been told that kaffir lime leaves do freeze and thaw quite nicely and so far I've done that with no complaints
