If he had kept up with it, there is no reason to believe Jotaro couldn't stop time for possibly even minutes. But he lacks the drive.
The thing is, he’s not a vampire like Dio which means Jotaro, a human, has less control over stopped time. He lacks the stamina and the maximum he can stop time is 5 seconds. But Dio is a superhuman. He has stamina an can stop time for minutes if he trained

The only thing about part 6 thats truly disappointing is that Star platinum is nerfed so hard by Jotaro. Which in part 4 it made sense, if he fought in part 5 it would also make sense. But Puchi is a direct threat to his daughter and the fact he lets star land a single hit on Puchi without punching straight through his skull is really the only thing that truly bothered me about this part because we know the sheer level of love Jotaro ultimately has for his daughter. Still a great part though

The only thing about part 6 thats truly disappointing is that Star platinum is nerfed so hard by Jotaro. Which in part 4 it made sense, if he fought in part 5 it would also make sense. But Puchi is a direct threat to his daughter and the fact he lets star land a single hit on Puchi without punching straight through his skull is really the only thing that truly bothered me about this part because we know the sheer level of love Jotaro ultimately has for his daughter.
Still a great part though
