    Ingredients (Serves 2)
    ✅ 1 cup cooked quinoa
    ✅ 2 eggs (scrambled or fried)
    ✅ ½ avocado (sliced)
    ✅ 1 cup fresh spinach (sautéed in olive oil)
    ✅ ¼ cup cherry tomatoes (halved)
    ✅ 2 tbsp feta cheese (optional)
    ✅ 1 tbsp olive oil
    ✅ Salt & pepper to taste
    ✅ Hot sauce or sriracha (to taste)
    Instructions
    Sauté the spinach: Heat 1 tbsp olive oil in a pan over medium heat, add spinach, and cook until wilted (1-2 minutes). Season with salt & pepper.
    Cook the eggs: Scramble or fry the eggs to your preference.
