Not a silly question, you're fine! You would need a reservation and you can book one through their website (www.yasu-sushibar.com). I believe they utilize OpenTable as their reservation system. There should be two options, one for the sushi bar and one for a table seat. I 100% recommend choosing the sushi bar seating. I made my reservation a month ahead of time, but I think you should be fine a couple weeks out. They provide available dates/times to choose from. :)
I do apologize for the not getting to your comment sooner. Although I'm not 100% sure, I do know a customer at the time of my seating requested that less rice be used for her nigiri courses which the chef obliged. It seems they're open for customer requests/preferences and I wouldn't imagine them omitting the wasabi would be an issue. I would call the restaurant directly or send them an email and hopefully they'll give you a more precise answer. - Vince
