Same! My favorite Bowser themes incorporate the electric guitars, but also the organs and choirs. It perfectly suits his hardcore awesomeness with the epic tone of a final battle against an evil king

The organ is my favorite musical instrumment. And this is my favorite music who is played in one organ, the Ultimate Koopa's theme is the best music from Super Mario 64 and this is my favorite music from the game. I love this music very much.

It took me until today to realize that the background trumpets(??) at 0:53 are playing the same background theme as the clarinets(??) in the other Bowser-boss-theme.. these remastered soundtracks really make you feel like you had your ears clogged up until you listened to them. Amazing!
This is the best Bowser's final theme ever composed in the entire Super Mario game's franchise. This music is very much indecrible, wonderfull, fantastic, scarryded, threatend, and "shinning". A true masterpiece.
Something I always noticed is that the stars are always referred to as 'Power' Stars specifically, and Bowser during the final fight drops the Grand Star, the largest of all of the Power Stars. The only explanation I can give as to why Bowser is able to tank 2 hits during the fight along with his amped-up attacks besides "video game logic" is that he was actively using the Grand Star's power against you unlike the previous two times when he wasn't carrying any stars, only keys.
I think this may have inspired the Doopliss battle theme from Paper Mario TTYD. I don't know, the songs just sound similar in general, not just the instruments
