- Call it Stuffed Pizza Corners, Trapizzino or even Pizza Sandwich. This delicious piece of stuffed pizza is considered one of the most famous street food in Rome. It's traditionally stuffed with typical roman main courses like saucy meatballs, chicken cacciatore, meat stew, tripe and many more. This is so tasty and hands down, my favourite sandwich ever created. Let's make it together.

INGREDIENTS:
2 quarter size Trays (33x16cm - link below) 640 gr total dough divided into 160gr balls
DAY 1
230gr Strong Flour 14% Protein
230gr Water Room temp 70-75F (21-23 C)
1gr Dry Yeast
Day 2
All the Pre-ferment we did
5 gr Honey
140 gr Strong Flour 14% Protein
8 gr Salt
60 gr Water

Traditionally called "Trapizzino" in Rome which is a mix between a Tramezzino (triangular sandwich on white bread) and Pizza dough. Don't forget to like and subscribe! 👽

Hey! Awesome video and love the trapizzino! Do you have a recommendation of what pan I could use rather than the pans you have?
You can use any pans but I always recommend blue steel. The heat retention is far better than any other pan so you get a much crispier and well risen crust. Good luck and thanks for watching!
