The Perfect OXTAIL BURGER with Coconut Milk Buns

  • The wild flavour of Oxtail, pressed into a burger patty, deep fried it and served it hot on a sweet and toasted homemade coconut milk bun with a garlic and parsley Mayo. This is the most impressive burger I have ever made and taste. It’s effing delicious. There is a lot going on here in terms of textures: the crunch of the breadcrumbs, the pulled oxtail meat, the sweet and gooey coconut bun…It’s literally what you would order in every pub, if every pub had it.     For the Coconut Milk Buns:
    350 gr FLOUR
    20 gr SUGAR
    4 gr DRY YEAST
    200 ml COCONUT MILK
    40 gr WATER
    20 gr COCONUT OIL
    6 gr SALT
    EGGWASH & SESAME SEEDS (Optional)
    REST AT ROOM TEMP for 1 hr
    THEN Refrigerate FOR 2 Hrs to a max of 48 HRS (you can skip this part if you’re baking the buns the same day)
    Shape into 5 Balls, then rest for one more hour before baking it.
    Bake 350 F | 175C for 20 min or just until lightly golden. Rest 2 min on the tray, then move to a cooling rack.
    For the OXTAIL PATTIES:
    1.20 Pound | 550 gr BEEF OXTAIL
    2 GARLIC CLOVES
    1 bunch of PARSLEY
    2 Stalks of CELERY
    1 ONION
    1 CARROT
    250 ml RED WINE
    2 Bay LEAVES
    2 tbsp TOMATO PASTE
    400 gr TOMATO SAUCE
    150 ml WATER
    100 gr FLOUR
    2 EGGS
    200 gr BREADCRUMBS
    OIL TO FRY
    For the GARLIC MAYO:
    2 Tbsp Mayo
    1/2 Clove of GARLIC
    2 Tbsp PARSLEY

    Great stuff! Never seen oxtail used this way. I guess any beef that is tender enough to pull apart could be used like this.

      Thank you! You can use any meat that pulls apart but needs to have some good amount of fat to be able to gelatinize and being shaped as a burger! Thanks for watching! :)

    That bread looks amazing! What type of flour did you use? Btw, I love oxtail, it's one of my favourite meats.

      Hey there! I used bread flour, it came out so good, fluffy and chewy. So so good. Let me know if you try it! And yes, oxtail is a super flavoured meat, this burger was crazy good. :) Never had anything like that to be honest, maybe once in a pub but wasn't a burger, more just like a meat croquette.

    What you think about putting that cooked deboned meat though meat mincer?

      If you grind it, I think it'll end up having the same consistency of a hot dog, as the meat is very tender. But could try! :)
