I just learned of this this week. They grow wild here and I started sautéing them with garlic and a splash of lemon and ginger. It is quite tasty. Especially the shoots.
I know the groundhogs always thought my hosta were edible. I had beautiful green hostas that would grow to like 4 feet wide 2 feet high and the groundhog would come along and just eat the whole plant down to the ground. I got so frustrated that I moved them from my house to another location where I am a volunteer. They grow well there and there are no groundhogs around to destroy them, but this year I have decided to taste some of the shoots
Amazed! Never knew they were edible! I have a garden of hostas on the side of my house that I was going to rip out this year and replace with edible plants! You sir have just saved my hosta’s lives haha! Can’t wait to get out there and try them!
I love eating hostas! They are so easy to grow, shade tolerant, really the perfect spring edible. I usually cover them with an overturned flower pot (or a pile of leaves) to keep them from leafing out until they grow taller.

Good idea! I always only get a harvest or two before they leaf out!
Butter, Garlic n some Tony Charaches.... Maybe deep fry it??/ Egg wash it n roll it in flour then repeat n fry em???

Hostas, dahlias, chrysanthemum, etc. Lots of landscaping plants are edible.
