I love videos like this. How you grocery shop and then actually show us how you use the items and give us recipes. My all time favourite. Lots of love! ❤️
Hi, Nikki! I've been binge watching your videos lately, and I wanted to say thank you for inspiration. I wanted to ask you to make a video for any food storage tips.vThank you!
Definitely want to see a video about how you use tea tree oil for your skin! But I also really liked this video and would love to see more like it. It gave me a lot of great inspiration! Thank you!
I love your grocery haul, what I eat, & recipe videos. Thank you for making them. FYI, I’m loving your natural hair color! Whatever you’re doing with your skin/makeup, you look fabulous!!
This is the exact type of video I want to see! Thank you for all the great tips-Im going to get a notebook and take notes 😊 Also, your white bean quacamole is fantastic! It's going to be a staple for sure.
I love hummus and grainy mustard...but never thought to combine them! Awesome idea! And is there anything better than avocado and lime? Divine! I love chickpeas tacos 💛
Your meal ideas are amazing. I am so picky but I feel like I would love everything in this video! Also, I would love to see a beauty/skin care video. Bring on all the grocery halls and what I ate today videos, they are my favorite!
Loved the format of this video. I also loved the quick recipe ideas you gave us like with the butternut squash soup. I spend a lot of time cooking so I would love to see easy quick yet still healthy recipes- ideas like what you did with the squash and nutribullet 😊 I would also appreciate videos where you can sneak more greens in if you are not a big salad lover.
This is one of my favorite videos from you! I hope you come out with another cookbook because I love how everything you make is easy, healthy & delicious!
You are amazing! Your recipes and snacks seem so doable! And I like the helpful tips like finely chopping or shredding your greens. So so true. I always like it better that way at restaurants, idk why I have never done that at home.
Also, I love when you did the veganized video, where you alter a yummy recipe you've found to make it all vegan ! Like the grilled Tofu with quinoa and lemon Mayo dressing - one of my fav meals now! :)
This was my favorite video you've ever done Nicole! It was just one awesome idea after another and you have so many tips and combos that I never would've thought to put together but I'm sure is delicious!
I enjoy all of your videos! i always like to see new recipes to try, but honestly I just really enjoy all of your content - you make vegan cooking so accessible and you have such a lovely vibe. :)
Loving the darker hair! I lived in Denmark for a year and we ate so many wasa crackers. I like your videos where you do a few different recipes like the one you did around the holidays with the 3 different side dish ideas. I dream about that tahini harissa cauliflower!
I think my very favorite videos of yours are the vegan grocery hauls (at Trader Joe's or Whole Foods) with easy meal ideas! I would love to see a video on using tea tree and jojoba oils in skincare, that would be awesome! Xo
Happy New Year, Nikki! Love your recipe ideas. They are always so good. I also really like your hair now. It looks so nice and shiny and healthy. It also complements your skin better. You look glowy.
Thank you for this video! I find these types of videos so inspirational. I am that person who buys carrots and has no idea what to do with them! 🤣 Would love to see more videos like this on your channel. Thank you for making such easy nutritious meals with simple ingredients! 😁
haha the struggle is real! Sometimes I juice them with lemons or oranges, maybe a little ginger (such a good combo) or I roast them whole with a tiny tiny bit of coconut oil, sage, rosemary, and sea salt. So good. Really loving them very finely shredded with lemon juice and sea salt though, such a nice texture. Sometimes I add golden raisins to the mix too. Adds a nice, subtle sweetness. So glad you like these kinds of videos! Means a lot to me to know that you find them helpful
Thanks and thank you for noticing! I'm so glad it's helpful! And thank you, loving the hair color change. Feels fresh for the new year :) Hope you're having a good day hun
Nikki you should do a q&a or updated “get to know me/50 facts about me” or something. I watch your videos all the time but still don’t feel like I *know* you! Also understand wanting to keep life private, though. :)
Loved the video! Perfect that you gave us idea about every grocery. So surprised when u showed the wasa crackers, since I'm from sweden I absolutely love them
Aw thank you for noticing! That means a lot to me. I'm so glad you can feel how much I truly love making these videos and sharing this info :) So glad you liked it!
What I ate videos and grocery hauls are great. also favorite products and I would love to see pantry and fridge tour as well as how to keep produce fresh.
Great video! Thanks so much for all the time and effort you put into this. I’m always surprised you don’t have a million subscribers yet. I do my part though; I’m always recommending your channel to friends and coworkers who are interested or curious about our healthy vegan lifestyle. Peace.
Would love to see what you do with tea tree oil! I have gone off birth control before, and my skin freaksssss out. I'm wanting to get off it again, but I'm afraid of the after effects. Thanks for all the awesome content!
Cassie Bolden a video about tea tree oil is coming soon 😊 and I know what you mean! It’s taken months for my body to adjust and I think it’s still adjusting but it’s teaching me to have patience with my body and take really good care of my self...video about that coming soon too 😊💚
This should be labeled "Whole Foods Haul" , lol! I practically live there and save money by buying their brand and bulk. I use that jojoba oil on my whole body because it leaves my skin so soft. I always buy that butternut squash for a soup i make with those yams. I get all the varieties as well. The purple one tastes like candy but the Hannah Yams are my faves ( the beige ones). I loved the Scandinavian carrot salad recipe. I am trying that!
Here you go! Hope you love it ua-cam.com/video/NK0xcYYEA7Q/v-deo.html&t= Also yay! Let me know if you find any amazing gems there that I need to try :)
New hair looks sooooo good Nikki. These videos are super helpful! Would also like more what I eat in a day and vlogs. Yay for the video about your skin, and yay for you being scandinavian, I'm from Sweden :)
Aw that's cool! I was raised by my mom and grandma who are both from Norway so Scandinavian culture is very close to my heart. I will definitely make more of those kinds of videos, thanks for letting me know what you'd like to see :)
lol I didn't know if it was too different of a combo, never really saw anyone else do it, I'm glad I'm not the only one! I was just like, hmm wonder how this will taste and it was really good. My 3 year old wanted some of my "sour toast" too.
I would love to see a natural beauty routine! I recently tried the no-heat challenge to try and bring my hair back to good health, and it changed my hair dramatically! I use to style it every day and it took hrs to air dry, and was always frizzy if i didn't style it. You should try combining rosemary, peppermint, and lavender essential oils with the jojoba oils to make a hair mask. Those all help to promote hair growth
Oh cool! Thanks Hannah :) I'll try to make a mask like that soon. Love stuff like that. I also only heat style my hair like 2-3 times a week...actually sometimes only like once a week lol depends on how much I have to film and what not. Most days I let it air dry and put it in a braid with some oil in the ends
do you have the 'how not to die' cookbook? I got it as a christmas gift and I've already made quite a few recipes from it and they're all soooo good & simple to make!!
raw brownies (these are SO good), two types of veggie burgers - one was black bean and the other was a beet/black bean burger (this one was my favourite!!), a savoury spice blend, ranch dip, umami sauce, a stir fried rice style dish, and I think one or two others but I can't remember them off hand lol! Ive pretty much exclusively used the book since I got it if I want to follow a recipe and not make something up on the fly
I make a Blender soup like that with butternut squash, cauliflower and instead of cashews, I use soaked cashews. But for that I would definitely suggest only doing if you have a vitamix or blendtec.
I’ve never tried butternut squash, but would love to try your macaroni recipe. My question is if the butternut squash is on the sweet side, I definitely prefer a salty mac. Thanks for sharing wonderful recipes!
I hear you! With the spices and the other ingredients it's salty and savory :) Try it and let me know what you think!! ua-cam.com/video/NK0xcYYEA7Q/v-deo.html&t=
Try it! I just take very finely shredded carrots and add fresh lemon juice, sea salt and pepper. Also, adding golden raisins to the carrots is good too! Adds a nice subtle sweetness to the carrots which is good. Ugh. Wish had some now actually lol let me know what you think!
I grew up eating Wasa in the few of the other things that you have shown. I use edensoy to make my homemade soy yogurt. The soy milk cannot have anything other than soy beans in water and they seem to be the only brand that does that.
I love it Nikki, you also purchase my favorite soy milk, but lately I've been buying the Trader Joe's brand, because it too has only two ingredients, but it's just not nearly as creamy for some reason is the Edensoy brand. I always tell people about this one, because they think all soy milk is just too watery or gross, but this one is exceptional! Also pricier...
Love rosehip oil! I used to do that too but now I'm using a moisturizer by a company called Drunk Elephant. I am really loving the Jojoba and tea tree oils though, finding SO many uses for both! I'll make a video about both soon :)
I’m still waiting for my normal supermarket to carry Engine 2 brand items. I hate that I have to make a trip to Whole Foods for them. The sauerkraut on the Wasa rye crispbreads would be really good,
All the videos! lol, what I eat in a days are usually my faves in general, but you have some of the best recipes so I love those too. This one was great as well. Either way, I'm excited for more. Happy 2018! :)
Thanks Kendra! It's so exciting to me that you like my recipes! I love sharing recipes and it means so much me to that you like them :) I have some new ones coming soon and a What I Ate Today coming after that. Hope you like

Recently discovered you and already you are a new favorite channel for me! Love the brunette hair, it looks great.

Also, some ideas on how to use leeks would be great! I have never cooked with them before.
That's great to know! Thank you :) I'm so glad you liked the ideas in this video, let me know if you try any of these things!
I use them like I use onions for sauces and soups, or just sautéed in a veggie bowl. They're so good for you and have a mild onion-y flavor :)
Thank you! I am going to try incorporating them more.
More videos of what I eat in a day please. I love watching your videos because they are healthy and simple.
Thanks for letting me know! That means a lot to me. More what I ate today videos coming soon :)

Or vlogs!!
The combo of hummus and sauerkraut sounds really good, don't know why 😂😍
Right? Kind of odd but the flavors and textures work so well together!

Great video! Thanks so much for all the time and effort you put into this. I’m always surprised you don’t have a million subscribers yet. I do my part though; I’m always recommending your channel to friends and coworkers who are interested or curious about our healthy vegan lifestyle. Peace.
That means the absolute world to me! Thank you so much for telling friends and family about my channel
I love the bean idea for the guacamole because I really could eat 6 avocados!😂
Seriously same lol like, easily 😂🥑💚
Would love to see what you do with tea tree oil! I have gone off birth control before, and my skin freaksssss out. I'm wanting to get off it again, but I'm afraid of the after effects. Thanks for all the awesome content!
Cassie Bolden a video about tea tree oil is coming soon 😊 and I know what you mean! It’s taken months for my body to adjust and I think it’s still adjusting but it’s teaching me to have patience with my body and take really good care of my self...video about that coming soon too 😊💚
These recipes look great!
Yes let's see the beauty video.
Thanks for the food inspiration !
Great! Thanks for letting me know Lori :)
Ummmm....we have SO much in common! lol I practically live there too and I LOVE the Hannah potoatoes. Definitely my favorite :) so funny
NikkiVegan I never knew they existed until I found them at WF! I loved orange ones but after the Hannah ones??? I found a new love.
Must find the Mac n cheese!
There's a Whole Foods opening down the street from my office this year. Pretty excited.
Yeah, I'm looking forward to trying the new E2 Ravioli. Kite Hill makes one that I love, but it's pricey.
I just recently randomly put garlic dill sauerkraut on hummus toast the other day! It was pretty good!
haha great minds think alike!
lol I didn't know if it was too different of a combo, never really saw anyone else do it, I'm glad I'm not the only one! I was just like, hmm wonder how this will taste and it was really good. My 3 year old wanted some of my "sour toast" too.
Love your brown hair! Keep it that way, it looks amazing!
I think I will! I've been liking it this way... way more natural :) Glad you like
I would love to see a natural beauty routine!
No but it's on my list! Looks awesome. What have you made from the book so far?
raw brownies (these are SO good), two types of veggie burgers - one was black bean and the other was a beet/black bean burger (this one was my favourite!!), a savoury spice blend, ranch dip, umami sauce, a stir fried rice style dish, and I think one or two others but I can't remember them off hand lol! Ive pretty much exclusively used the book since I got it if I want to follow a recipe and not make something up on the fly
Loved this! I’ve made your Mac & cheese recipe a few times now & you’re right, it never disappoints! 😊
Thanks! I'm thrilled you like it! So easy, right? :)
NikkiVegan so easy & so good!
can we have the mac and cheese link? :) i want to make it right now!
here ya go! ua-cam.com/video/NK0xcYYEA7Q/v-deo.html&t= It's my favorite. Hope you love it!
I just made and it's soooo good!
I make a Blender soup like that with butternut squash, cauliflower and instead of cashews, I use soaked cashews. But for that I would definitely suggest only doing if you have a vitamix or blendtec.
I love all of these recipes thank you!!!
I'm so glad!! Here's the mac and cheese recipe if you want to give it a try
btw i have always loved the hot cold salad thing, too! i really like breaded baked "chicken" on it
right! feels more like a meal that way :)
love this video ❤👍 happy new year! 😘
Thanks Pamela! Happy New Year to you too
I’ve never tried butternut squash, but would love to try your macaroni recipe.
NikkiVegan I definitely will. Thank you!!
NikkiVegan does the cashew butter need to be raw? I have a jar but it’s roasted. Thanks for any input.

Thanks so much! In going to try that shredded carrot recipe for sure-looks delish!
All great ideas! Thanks Jasmine :)
Try it! I just take very finely shredded carrots and add fresh lemon juice, sea salt and pepper. Also, adding golden raisins to the carrots is good too! Adds a nice subtle sweetness to the carrots which is good. Ugh. Wish had some now actually lol let me know what you think!
What I eat in a day! And recipe videos 😃
Working on a new one now! Happy you like them :)
Lunch box videos. What to take to work with me that is easy, filling and yummy
Rosemary would go well in that soup!💯💚
So true! I love rosemary :)
I grew up eating Wasa in the few of the other things that you have shown. I use edensoy to make my homemade soy yogurt. The soy milk cannot have anything other than soy beans in water and they seem to be the only brand that does that.
All the recipes look so good
Thanks!! So glad you like it
Great ideas, thanks so much! Love vlog style/what I Ate videos 😊
Thanks for letting me know! I have more what I ate today videos coming soon :)
Love this video. Please make more.💗
I love it Nikki, you also purchase my favorite soy milk, but lately I've been buying the Trader Joe's brand, because it too has only two ingredients, but it's just not nearly as creamy for some reason is the Edensoy brand. I always tell people about this one, because they think all soy milk is just too watery or gross, but this one is exceptional! Also pricier...
Yeah I noticed that too! The edensoy is so creamy and has such a nice taste :)
What do you like to use soy milk for?
Trixie Rose I use it in oatmeal, smoothies, sometimes if I soup or in rice or something needs to be creamy if I don't want to use cashews.
I have recently started to use Rosehip oil on my face and hands and I love it. I would love to hear what you think about Jojoba oil and tea tree oils.
Love rosehip oil! I used to do that too but now I'm using a moisturizer by a company called Drunk Elephant. I am really loving the Jojoba and tea tree oils though, finding SO many uses for both! I'll make a video about both soon :)
WHAT I EAT IN A DAY VIDEOS!!
got one coming soon!
I’m still waiting for my normal supermarket to carry Engine 2 brand items. I hate that I have to make a trip to Whole Foods for them. The sauerkraut on the Wasa rye crispbreads would be really good,
I love the Kashi cereals
same! this one is good! not to sweet but still satisfies my sweet tooth :)
Glad I found your channel. Please share the leek soup recipe. TFS...
